Now and then I get a hunger for just such fare. I figured I'd do it up a little different this time around. Note: Betty Graves' Tuna and Noodle Casserole inspired this one. I'll try hers next. The Cream Cheese, Mixed Veggies and Grated Italian 6 Cheeses and Shredded Parmesan did the trick. It was a hit. I noted various brands...

Number Of Ingredients 13

1 pkg 12 0z. wide noodles (kalona noodles- old fashined amish country)
1 pkg 6.4 oz. tuna in water (vacuum sealed - our family, foil pack)
1 1/2 c frozen steamy veggies -- (jewel)
3 Tbsp extra virgin olive oil, divided (or any oil)
1/2 tsp salt
THE SAUCE
1 pkg 8 oz. philly cream cheese
2/3 c shredded italian 6 cheese
2/3 c shredded parmesan cheese
1 c milk
OPTIONAL
1/3 c panko crisp bread crumbs to top
1 Tbsp evoo drizzled on top

Steps:

  • 1. When water is at a simmer add 1 teaspoon oil and 1/2 teaspoon salt. Cook noodles per package directions. I boiled for about 10 minutes, after water came to a boil. Note: Salt will pit Stainless Steel Cookware if added before water comes to a boil.
  • 2. In a small bowl microwave the 1 1/2 cups of mixed veggies (mine were Broccoli, Onion, Mushroom and Sweet Red Peppers mix), with one pat butter. They worked excellently.
  • 3. In medium bowl add 8 oz. Cream Cheese, and 1/2 cup of the milk. Microwave 2/12 minutes, then stir well. Cream cheese should be melted quite well if not microwave a little more. Add the 2/3 cups of Shredded 6 Cheese Italian and 2/3 cups Shredded Parmesan and stir to melt shredded cheese. When melted add the other 1/2 cup of milk and mix well.
  • 4. Drain noodle when done to desired state. Drizzle on 1 tablespoon of EVOO or 3 pats of butter, and stir well gently.
  • 5. Lightly oil your baking dish or pan. I used a 9"by 13" glass cake dish. Pre-heat oven to 325 degrees.
  • 6. Add Noodles, Veggies and Tuna to dish and stir well. Add the Cheese and Milk mixture and stir and combine gently.
  • 7. I top with 1/3 cup Panko Plain Bread Crumbs and drizzle with Extra Virgin Olive Oil.
  • 8. Bake at 325 degrees for 30 to 40 minutes. You could cover with foil, (I chose not to. Noodles did not dry out or over cook on top).
  • 9. Serve with a side or salad and some great French or Italian Bread. Enjoy. This will hold up to an additional bit of milk to moistene when reheating leftovers.
  • 10. Note: Kalona Noodles is the brand name. In a cellophane bag. An excellent noodle.

1/3 cup olive oil, plus more for baking dishes
Coarse salt and ground pepper
1 pound wide egg noodles
2 red bell peppers (ribs and seeds removed), thinly sliced
1/2 cup all-purpose flour
5 cups whole milk
4 cans (6 ounces each) tuna in olive oil, drained
1 can (14 ounces) artichoke hearts, drained and thickly sliced
5 scallions, thinly sliced
1/2 cup finely grated Parmesan

Steps:

  • Preheat oven to 400 degrees. Lightly oil two 8-inch square (or other shallow 2-quart) baking dishes. In a large pot of boiling salted water, cook noodles until 2 minutes short of al dente; drain, and return to pot.
  • Meanwhile, in a 5-quart Dutch oven or heavy pot, heat oil over medium. Add bell peppers; season with salt and pepper. Cook until crisp-tender, 4 to 6 minutes. Add flour and cook, stirring, 1 minute. Gradually add milk, stirring until smooth. Cook, stirring occasionally, until mixture comes to a simmer.
  • Remove from heat; add mixture to noodles in pot, along with tuna, artichoke hearts, and scallions. Season with salt and pepper, and toss. Divide between prepared baking dishes, and sprinkle with Parmesan. Bake until golden and bubbling, about 20 minutes.

3 cups cooked macaroni
1 (5 ounce) can tuna, drained
1 (10.75 ounce) can condensed cream of chicken soup
1 cup shredded Cheddar cheese
1 ½ cups French fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 9x13-inch baking dish, combine the macaroni, tuna, and soup. Mix well, and then top with cheese.
  • Bake at 350 degrees F (175 degrees C) for about 25 minutes, or until bubbly. Sprinkle with fried onions, and bake for another 5 minutes. Serve hot.

1 pkg egg noodles, cooked & drained (12 oz)
2 can(s) cream of mushroom soup, undiluted (10.5 oz each)
1 pkg shredded cheddar (8 oz)
1/2 medium onion, diced
2 can(s) tuna, packed in water, drained (5 oz each)
1 sleeve Ritz crackers or similar
1 stick margarine, melted
1 c mayonnaise
1/2 pkg frozen mixed corn/peas/carrots (12 oz package)
3-4 dash(es) hot sauce
1 jar(s) pimentos (2 oz)
1 c ricotta cheese (optional)
3/4 c water

Steps:

  • 1. Preheat oven to 350 degrees. Mix in large bowl tuna, soup, onion, mayo, frozen veggies, hot sauce, pimento, ricotta, water, and half a bag of shredded cheddar.
  • 2. Next fold in cooked egg noodles.
  • 3. Then spread the mixture in a 9x13 pan sprayed with non-stick spray.
  • 4. Cover with remaining cheese.
  • 5. Mix melted margarine and crushed crackers until well coated. Sprinkle over casserole.
  • 6. Bake until golden and bubbly.
  • 7. HINT: I have also used pepper jack cheese in this instead of the cheddar and it's great if you like spice. I have had the suggestion of adding another can of tuna to this because with all the other flavors the tuna flavor is not very strong. To each his own.
