SUGAR FREE NEW YORK STYLE CHEESECAKE (STEVIA)

Sugar Free New York Style Cheesecake (Stevia) image

my dad is diabetic an I've seen there inst a lot of recipes that are really "safe" for diabetics. as they shouldn't have flour or things high in carbs. Also I go the natural way with stevia or xylitol. for this I use stevioside which is stronger then regular stevia (they didn't have stevioside as an option) so if you are using regular stevia you may want increase it,,, but do it by taste. I always make two cheesecakes at a time for him so he can freeze one and he always has something on hand to eat. I'm also including two variations,,,, personally I like the key lime version better,,, but you decide.

Time 1h10m

Yield 1 9 inch cheesecake, 16 serving(s)

Number Of Ingredients 11

1/4 teaspoon stevia (stevioside)
2 eggs
2 egg whites
2 tablespoons cornstarch
3 (8 ounce) packages cream cheese, softened
1 cup sour cream
2 teaspoons vanilla
2 vanilla beans, scraped
8 ounces whole pecans, ground
1 1/2 tablespoons butter, softened
1 tablespoon flour (optional)

Steps:

  • Grind the pecans, mix with butter and flour (just helps to hold together, but you don't need it). Put into a 9 inch springform pan.
  • In a bowl beat cream cheese, sour cream, vanilla, stevia until fluffy (this is the point I do the tasting to see if it may need more stevia, everyone's taste is different so add a little at a time til you find what " tastes good to you. I use the stevioside which is stronger then regular stevia).
  • Beat in eggs, egg whites and cornstarch. pour mixture over crust into springform pan. bake at 300°F until firm in center (45-60 minutes) refrigerate overnight.
  • Variations: using above recipe.
  • Key Lime-.
  • Zest and juice 5 key limes ( they a smaller then regular limes) plus another 3 tbsp of lime juice, omit the vanilla beans if you like. Add at the beginning, at tasting for stevia see if you need more juice.
  • Chocolate-.
  • Use almonds instead of pecans for the crust.
  • Omit the egg whites and increase eggs to three total. Add 1/3 cup Dutch cocoa.

Time 50m

Yield 24 cupcakes

Number Of Ingredients 16

1 1/2 cups gluten-free graham cracker or ginger spice cookie crumbs, such as Pamela's Gluten-Free Spicy Ginger Snaps
4 eggs
2 sticks (1 cup) butter, at room temperature
2 cups granulated sugar
2 tablespoons vanilla bean paste
2 2/3 cups gluten-free all-purpose baking mix
1 1/2 cups whole milk
1 1/2 cups raspberry preserves
Vanilla Bean Cream Cheese Frosting, recipe follows
Raspberry Coulis, recipe follows
1 pound cream cheese, softened
4 tablespoons (1/4 cup) butter, at room temperature
2 cups sifted powdered sugar
2 teaspoons vanilla bean paste
12 ounces fresh or frozen raspberries
1/2 cup sugar

Steps:

  • Preheat the oven to 375 degrees F. Line two standard 12-cavity muffin pans with cupcake liners. Evenly distribute the gluten-free cookie crumbs into the liners, about a tablespoon in each cup.
  • Crack the eggs into a small container and set aside.
  • In the bowl of a stand mixer with a paddle attachment, beat the butter on medium speed until it is light in color and fluffy. Add the sugar to the butter and continue beating until the sugar is uniformly incorporated into the butter. Stop the mixer and scrape down the sides of the bowl, and then restart the mixer on low speed. Add 1 egg at a time, waiting until it is fully incorporated in the butter mixture before adding the next egg.
  • Once all the eggs have been added, stop the mixer and scrape down the sides of the bowl to ensure that all the butter is incorporated with the eggs. Add the vanilla bean paste and blend uniformly.
  • Add the gluten-free baking mix in three additions, alternating with the milk, in two additions, fully incorporating each addition into the batter before moving to the next step. If needed, stop the mixer after each addition and scrape down the sides of the bowl and then resume mixing on low.
  • Once all the dry ingredients and the milk have been combined with the butter mixture, evenly fill the cupcake pan cavities two-thirds of the way full. Bake the cupcakes until the top of each cupcake is slightly springy to the touch and a toothpick inserted in the center comes out clean, 14 to 16 minutes.
  • Remove from the oven and immediately turn the cupcakes out of the pan onto a cooling rack. Let the cupcakes cool completely.
  • Using an apple corer or knife, core out the center of each cooled cupcake. Then fill with 1 tablespoon raspberry preserves and top with the Vanilla Bean Cream Cheese Frosting. Drizzle a small amount of the Raspberry Coulis over the top.
  • In the bowl of a stand mixer, combine the cream cheese and butter and beat until soft and fluffy. Add the powdered sugar and vanilla bean paste. Whisk on low speed to combine so there is no loose powdered sugar on the bottom of the bowl and then turn the mixer onto medium-high. Whip until very light and fluffy.
  • Fit an 18-inch plastic piping bag with an 847 star tip and twist the bag right by the tip to prevent the buttercream from leaking out. While you grasp the piping bag right above the star tip with your hand, fold the top of the piping bag over your hand and spoon the cream cheese frosting into the piping bag. Set aside.
  • Put the raspberries in a heavy saucepot and heat until warm. Mix together the sugar and 3 tablespoons water and add to the raspberries. Bring just to a boil, until all the sugar dissolves. Let cool and pour the raspberry mix into a blender or food processor and puree. Strain through a fine mesh sieve to remove all or part of the seeds.

Time 6h20m

Yield 8 servings

Number Of Ingredients 9

6 tablespoons unsalted butter, melted and cooled, plus more for the pan
1 1/4 cups almond flour
1/2 cup pecans
1/4 cup confectioners' erythritol sweetener, such as Swerve
Five 8-ounce packages cream cheese, at room temperature
1 3/4 cups confectioners' erythritol sweetener, such as Swerve
1 tablespoon lemon juice
1 1/2 teaspoons vanilla extract
3 large eggs

Steps:

  • For the crust: Position an oven rack in the center of the oven and preheat to 350 degrees F. Generously butter the bottom and sides of a 9-inch springform pan.
  • Combine the almond flour, pecans, sweetener and melted butter in a food processor and pulse until finely ground and combined. Turn the mixture out into the prepared springform pan and press it firmly on the bottom and about 1 1/2 inches up the sides. Bake the crust for 10 minutes, then cool completely on the rack.
  • For the filling: Reduce the oven temperature to 325 degrees F.
  • Combine the cream cheese, sweetener, lemon juice and vanilla in the bowl of a stand mixer and beat until lightened and smooth. Add the eggs one at a time, beating to incorporate after each addition.
  • Scrape the mixture into the cooled crust and smooth the top with an offset spatula. Bake until the edges of the cake are set but the center is still jiggly, 45 to 50 minutes. Run a thin knife around the edges of the cake to separate it from the pan, then let the cake cool for 1 hour.
  • Loosely cover the cheesecake and refrigerate until cold, at least 4 hours, before serving.

ORIGINAL NEW YORK CHEESECAKE

There will never be a better cheesecake than Junior's famous original. Here's the recipe for the New York-style cheesecake.

Yield Makes one 9-inch or 8-inch cheesecake, about 2 1/2 inches high

Number Of Ingredients 16

For one 9-inch cheesecake
1 recipe 9-inch Junior's Sponge Cake Crust
Four 8-ounce packages PHILADELPHIA cream cheese (use only full fat), at room temperature
1 2/3 cups sugar
1/4 cup cornstarch
1 tablespoon pure vanilla extract
2 extra-large eggs
3/4 cup heavy whipping cream
For one 8-inch cheesecake
1 recipe 8-inch Junior's Sponge Cake Crust
Three 8-ounce packages PHILADELPHIA cream cheese (use only full fat), at room temperature
1 1/3 cups sugar
3 tablespoons cornstarch
1 tablespoon pure vanilla extract
2 extra-large eggs
2/3 cup heavy whipping cream

Steps:

  • The day before you plan to serve the cheesecake:
  • 1. Preheat the oven to 350°F. Make and bake the cake crust as directed and leave it in the pan. Keep the oven on.
  • 2. In a large bowl, using an electric mixer fitted with the paddle attachment if your mixer has one, beat 1 package of the cream cheese, 1/3 cup of the sugar, and the cornstarch together on low until creamy, about 3 minutes, scraping down the bowl several times. Blend in the remaining cream cheese, one package at a time, beating well and scraping down the bowl after each.
  • 3. Increase the mixer speed to medium and beat in the remaining sugar, then the vanilla. Blend in the eggs, one at a time, beating well after each. Beat in the cream just until completely blended. The filling will look light, creamy, airy, and almost like billowy clouds. Be careful not to overmix! Gently spoon the batter over the crust.
  • 4. Place the cake pan in a large shallow pan containing hot water that comes halfway (about 1 inch) up the side of the springform. Bake until the edge is light golden brown, the top is light gold, and the center barely jiggles, about 1 1/4 hours. If the cake still feels soft around the edge, let it bake for 10 minutes more (the cooking time will be about the same for both the 8- and 9-inch cheesecakes). Remove the cheesecake from the water bath, transfer to a wire rack, and let cool for 2 hours (just walk away-don't move it). Then, leave the cake in the pan, cover loosely with plastic wrap, and refrigerate until completely cold before serving, preferably overnight or for at least 6 hours.
  • On serving day:
  • 5. Release and remove the side of the springform, leaving the cake on the bottom of the pan. Place on a cake plate. Refrigerate until ready to serve. Slice with a sharp straight-edge knife, not a serrated one, rinsing the knife with warm water between slices. Refrigerate any leftover cake, tightly covered, and enjoy within 2 days, or wrap and freeze for up to 1 month.

Tips:

  • Use a sugar-free sweetener that you like. There are many different sugar-free sweeteners on the market, so you can choose one that you enjoy the taste of. Some popular options include stevia, monk fruit, and erythritol.
  • Be careful not to overbeat the cream cheese. Overbeating the cream cheese can make the cheesecake dense and crumbly. Mix it until it is smooth and creamy, but do not overbeat it.
  • Bake the cheesecake in a water bath. This will help to prevent the cheesecake from cracking. Place the cheesecake pan in a larger pan filled with hot water.
  • Chill the cheesecake for at least 4 hours before serving. This will allow the cheesecake to set properly and develop its full flavor.

Conclusion:

This sugar-free New York cheesecake is a delicious and decadent dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people with diabetes or those who are simply looking for a healthier dessert option. With its creamy texture and rich flavor, this cheesecake is sure to be a hit with everyone who tries it.
