ROQUEFORT PEAR SALAD

This is the best salad I've ever eaten and I make it all the time. It is tangy from the blue cheese, fruity from the pears, and crunchy from the caramelized pecans. The mustard vinaigrette pulls it all together.

1 tablespoon brown sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
2 teaspoons vegetable oil
1 cup pecan halves
1/2 peeled chopped granny smith apple
1 shallot
1/4 cup vinegar
1 teaspoon sugar
2/3 cup corn oil
1/3 cup walnut oil
salt and freshly ground pepper
1/2 sliced small red onion, separated into rings
8 ounces green beans
salt
8 ounces baby mixed greens
8 ounces seedless red grapes
2 ripe unpeeled pears, cut lengthwise into 1/4-inch slices
freshly ground pepper
8 ounces Roquefort cheese
2 tablespoons chopped fresh chives

Steps:

  • For the pecans, combine the brown sugar, cayenne pepper and cumin in a bowl and mix well. Stir in the oil. Add the pecans and toss to coat. Spread the pecans in a single layer on a baking sheet. Toast at 350 degrees for 15 to 20 minutes or until light brown, stirring once. Let stand until cool. You may prepare up to 2 days in advance and store in an airtight container.
  • For the vinaigrette, process the apple and shallot in a blender or food processor until smooth. Add the vinegar and sugar. Process until blended. Add the corn oil and walnut oil gradually, processing constantly until creamy. Season with salt and pepper. Use immediately or store covered in the refrigerator. Shake well before using.
  • For the salad, soak the onion in cold water or wine vinegar in a bowl. Blanch the beans in boiling salted water in a saucepan until tender-crisp; drain. Rinse with cold water until cool; drain. Toss the pecans, drained onion, beans, mixed greens, grapes and pears in a salad bowl. Add half the vinaigrette and toss gently until coated. Sprinkle with salt and pepper; Crumble the cheese over the top and toss to mix. Sprinkle with the chives. Serve with the remaining vinaigrette.

ROQUEFORT PEAR SALAD

Time 25m

Number Of Ingredients 13

1 large bag of Spring Mix Salad Blend
2 ripe pears peeled and sliced
5 ounces blue cheese, crumbled
1 ripe avocado, peeled and sliced
1/2 cup sliced green onions
1/2 cup toasted pecans
1/3 cup olive oil
3 Tablespoons red wine vinegar
1 1/2 teaspoons sugar
1 1/2 teaspoons mustard
1 clove garlic, diced or 1 teaspoon garlic paste
1/2 teaspoon salt
pinch of black pepper

Steps:

  • Spread Spring Mix out on a large platter or place in a large but semi shallow serving dish. Top with pear slices, crumbled blue cheese, avocado slices, green onions and toasted pecans. In a separate small bowl or a quart sized canning jar, combine olive oil, vinegar, sugar, mustard, garlic, salt & pepper. Blend well or put a lid on your jar and give it a good shake. Serve salad with dressing on the side immediately.

Tips:

  • Choose ripe pears: Use firm but ripe pears for the best flavor and texture. Bosc or Anjou pears are good choices.
  • Toast the pecans: Toasting the pecans brings out their flavor and makes them more fragrant. You can toast them in a skillet over medium heat or in the oven at 350 degrees Fahrenheit for 5-7 minutes.
  • Use a good quality Roquefort cheese: Roquefort is a strong-flavored cheese, so it's important to use a good quality cheese that has a smooth, creamy texture.
  • Make the dressing ahead of time: The dressing can be made up to 2 days ahead of time. Just store it in the refrigerator until you're ready to use it.
  • Assemble the salad just before serving: The pears and pecans will start to brown if they sit in the dressing for too long, so it's best to assemble the salad just before serving.

Conclusion:

This Junior League Roquefort Pear Salad is a classic for a reason. It's a delicious and elegant salad that's perfect for any occasion. The combination of sweet pears, salty Roquefort cheese, crunchy pecans, and tangy dressing is simply irresistible. If you're looking for a salad that will impress your guests, this is the one to make.
