Bake until almost no indentation remains when touched, 10 to 12 minutes. Cool 2 minutes. Remove form cookie sheet.

Tips:

  • Use the right molasses. Not all molasses are created equal. For these cookies, you want to use unsulphured molasses, which has a milder flavor than other types of molasses.
  • Don't overmix the dough. Overmixing will make the cookies tough. Mix the dough just until the ingredients are combined.
  • Chill the dough before baking. Chilling the dough will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies at a high temperature. This will help the cookies develop a crispy exterior and a chewy interior.
  • Don't overbake the cookies. Overbaking will make the cookies dry and crumbly. Bake the cookies just until they are set.
