Yield 5

Number Of Ingredients 8

4 skinless, boneless chicken breasts
1 (6 ounce) container plain low-fat yogurt
1 lemon, juiced
1 cup dried bread crumbs, seasoned
½ teaspoon garlic powder
salt to taste
¼ cup butter
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place yogurt in a small bowl and stir until creamy smooth. Add lemon and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.) In a separate shallow dish or bowl combine the bread crumbs, garlic powder and salt to taste; mix together.
  • In a 9x13 inch baking dish place 1 scant pat of butter or margarine for each chicken breast. Rinse chicken breasts and pat dry. Dip each breast in the lemon/yogurt mixture, then in the bread crumb mixture (coating completely but not heavily).
  • Place coated chicken in the baking dish and top each breast with a full pat of butter or margarine. Sprinkle with chopped parsley and bake in the preheated oven for 1 hour. Let cool for 5 to 10 minutes before serving.

JULIE'S BAKED CHICKEN KORMA & RICE

Julie's Baked Chicken Korma & Rice image

This is the recipe I came up with to make chicken korma to take to a potluck, based on the excellent korma recipe my husband uses. I wanted to make it in a casserole form that would be easy to just mix together and bake then take in the same pan to the potluck. The folks at the gathering loved it, so I think it came out pretty darn well. :)

Time 1h10m

Yield 10-12 serving(s)

Number Of Ingredients 17

3 cups cubed skinless chicken breasts or 3 cups skinless chicken thighs
2 cups uncooked white rice
1 cup chopped onion
1 cup sliced mushrooms (optional)
1 tablespoon butter
1 tablespoon olive oil
4 tablespoons smooth cashew butter, warmed in microwave to soften
1 cup half-and-half
1 (13 1/2 ounce) can coconut milk or 1 1/2 cups plain yogurt
2 (14 1/4 ounce) cans chicken broth or 30 ounces homemade chicken broth
1/8 teaspoon cayenne, to taste
3 teaspoons turmeric
1 teaspoon cinnamon (Ceylon preferred)
1/2 teaspoon ground cloves
1 teaspoon ground coriander
2 teaspoons ground cumin
3 teaspoons ground cardamom

Steps:

  • Preheat oven to 375 degrees F.
  • In a large saucepan sauté the chopped onion and sliced mushrooms (if using) in butter and olive oil until onions are opaque.
  • Add spices and the remaining sauce ingredients except for one of the cans of broth (or half of your homemade); simmer for 5 minutes.
  • Turn off heat and add cubed chicken; stir.
  • Put uncooked rice in the bottom a large lightly-oiled lasagne pan and carefully pour the chicken/sauce mixture over (the pan will be pretty darn full).
  • (You can also just mix the rice into the sauce and pour into the pan, but if you do so make sure you evenly distribute the rice on the bottom of the pan.) Bake in 375 degree oven for 30 minutes, add the remaining can of chicken broth into the pan and stir well, then bake for an additional 30 minutes until rice is cooked through.
  • Makes about 10-12 potluck servings.

JULIE'S CHICKEN SALAD

Julie's Chicken Salad image

Unique chicken salad perfect for a nice luncheon. Serve on toasted heavy grain bread, on croissants, or on a bed of lettuce for a very unique chicken salad.

Provided by Julie Dwenger

Categories     Salad

Yield 9

Number Of Ingredients 9

1 pound skinless, boneless chicken breast halves - boiled
½ cup raisins
1 cup thinly sliced celery
¾ cup seedless grapes, quartered
½ cup walnuts, toasted and chopped
1 avocado - peeled, pitted and diced
1 tart apple - peeled, cored and chopped
1 cup mayonnaise
1 teaspoon fresh lemon juice

Steps:

  • In a large bowl toss together the chicken, raisins, celery and grapes. Fold in the avocado and the apple. Mix in the mayonnaise and lemon juice. Chill.

Nutrition Facts : Calories 374.8 calories, Carbohydrate 14.9 g, Cholesterol 48.1 mg, Fat 28.7 g, Fiber 2.9 g, Protein 16.8 g, SaturatedFat 4.3 g, Sodium 184.3 mg, Sugar 9.4 g

Tips:

  • Chicken breasts should be cold before marinating, to help the marinade penetrate better.
  • Use a glass or ceramic bowl for marinating, as metal bowls can react with the acid in the marinade.
  • If you want to marinate the chicken for longer, you can do so in the refrigerator for up to 24 hours.
  • Make sure to preheat the oven to the correct temperature before baking the chicken.
  • If you are using a convection oven, reduce the cooking temperature by 25 degrees Fahrenheit.
  • To prevent the chicken from drying out, baste it with the marinade or pan juices every 15 minutes.
  • Bake the chicken until it is cooked through, which you can check by inserting a meat thermometer into the thickest part of the chicken. The internal temperature should read 165 degrees Fahrenheit.
  • Let the chicken rest for 5-10 minutes before serving, to allow the juices to redistribute.

Conclusion:

Julie's Yogurt Baked Chicken is a delicious, easy, and healthy weeknight meal. The combination of yogurt, lemon, garlic, and herbs creates a flavorful marinade that helps keep the chicken moist and tender. Baking the chicken in the oven results in a crispy skin and juicy interior. Serve this dish with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
