JULIA'S FAMOUS SPICY BARBECUE SAUCE
This is a combination of different recipes I have tried over the past couple of years, keeping the elements I like the most. Everyone asks for the recipe so here it is! I like a spicy sauce. It's not too hot, but not sweet like most sauces out there. I'm still playing around with it, but I like how its going so far! ** update ** I have decided that perhaps pureeing the onions and garlic might be beneficial because most barbecue sauces don't have chunks of onion and garlic! I will work to change test and change this soon (3/2/10)

I've never cared that much for store bought barbecue sauce. I just like to make things myself from scratch including this spicy, deep red-brown sauce. You'll find it clings well when you slather it on grilled meat. -Helena Georgette Mann, Sacramento, California

Tips:
- Choose the right tomatoes. Roma tomatoes are the best choice for this recipe because they are meaty and have a low moisture content. If you can't find Roma tomatoes, you can use another type of tomato, but you may need to adjust the cooking time.
- Don't overcrowd the pan. When you are cooking the tomatoes, make sure not to overcrowd the pan. This will prevent them from cooking evenly.
- Use a food processor or blender. To make the sauce smooth, you can use a food processor or blender. If you don't have either of these appliances, you can also mash the tomatoes by hand.
- Add the spices. Once the tomatoes are cooked, you can add the spices. Be sure to taste the sauce before you add all of the spices, so you can adjust the flavor to your liking.
- Let the sauce simmer. After you have added the spices, let the sauce simmer for at least 30 minutes. This will allow the flavors to meld together.
