Time 30m

Number Of Ingredients 9

2 pork tenderloins (about 1 lb each)
1 tablespoon paprika
2 teaspoons EACH: onion powder and garlic powder
1 teaspoon EACH: oregano, salt, and pepper
1 tablespoon cooking oil
½ cup beef broth
1 tablespoon apple cider vinegar
1 tablespoon butter (can sub ghee for dairy-free)
Minced parsley (to serve)

Steps:

  • Preheat your oven to 400 degrees. Dry the pork tenderloins well with paper towels.
  • Mix the paprika, onion powder, garlic powder, oregano, salt, and pepper together in a small bowl. Rub this spice mix over all sides of the pork.
  • Heat the oil in a large frying pan over medium-high heat. Add the pork, working in 2 batches if your pan is not big enough to fit both tenderloins without them touching. Sear the pork on all sides until it is brown, about 6 minutes total. Take the pan off the heat.
  • Move the pork to a baking dish. If the spices left in the pan are black, wipe them away with a paper towel. Return the pan to the heat and add the beef broth. Scrape the bottom of the pan to remove any stuck-on bits then boil for 1 minute until it reduces to about ¼ cup. Pour this sauce over the pork.
  • Pour the apple cider vinegar over the pork then dot the top with the butter. Cover the baking dish with foil.
  • Bake the pork for 20-25 minutes, or until it reaches an internal temperature of 145 degrees. Let the pork rest for 5 minutes before slicing into 1/4 inch thick rounds. Serve with a little minced parsley, for color.

TENDER ROAST LOIN OF PORK

Tender Roast Loin Of Pork image

Last Sunday I had guests coming for an early dinner. I had to be gone for a few hours, so I popped this in the oven before I left. It was SO tender and juicy!! I'll make it like this all the time now. I think it would work well in a crockpot too, if you cut the roast in large pieces before browning.

Time 5h10m

Yield 6 serving(s)

Number Of Ingredients 5

3 -4 lbs pork loin roast
salt and pepper
1 teaspoon crushed rosemary
4 teaspoons oil (or better yet, bacon grease)
5 cups water

Steps:

  • Rub roast with salt and pepper.
  • Sprinkle with rosemary.
  • Heat oil in heavy skillet (oven proof).
  • Brown roast on all sides.
  • Add water.
  • Cover tightly with foil.
  • Bake at 325* for 4-5 hours.

Tips:

  • For the best flavor, choose a pork loin roast that is at least 2 inches thick. This will ensure that the roast stays moist and tender during cooking.
  • Trim any excess fat from the pork loin roast before cooking. This will help to prevent the roast from becoming greasy.
  • Season the pork loin roast generously with salt and pepper. You can also add other spices and herbs to taste, such as garlic powder, onion powder, paprika, or rosemary.
  • Sear the pork loin roast in a hot skillet before roasting. This will help to create a flavorful crust and seal in the juices.
  • Roast the pork loin roast in a preheated oven at 350 degrees Fahrenheit for about 20 minutes per pound. Use a meat thermometer to ensure that the internal temperature of the roast reaches 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, or 165 degrees Fahrenheit for well-done.
  • Let the pork loin roast rest for 10-15 minutes before slicing and serving. This will allow the juices to redistribute throughout the roast, resulting in a more tender and flavorful dish.

Conclusion:

Pork loin roast is a delicious and versatile dish that can be enjoyed by people of all ages. Whether you are looking for a simple weeknight meal or a special occasion dinner, this recipe is sure to please. With its juicy, tender meat and flavorful crust, pork loin roast is a dish that you will want to make again and again.
