1 lb. ground beef (browned and drained)
1 1/2 lbs potatoes (diced large)
3 carrots (sliced)
1 onion (diced)
1 garlic clove (minced (I had this on hand already))
6 oz. can tomato paste
2 cups water
1 tsp. salt
1/4 tsp. pepper
1 tsp. onion powder
1 tsp. dried oregano

Steps:

  • Add the cooked ground beef, potatoes, carrots, onions, and garlic to a 5-quart or larger slow cooker.
  • In a small bowl whisk together the tomato paste, water, salt, pepper, onion powder and oregano. Pour this mixture over everything in the slow cooker. Stir.
  • Cover and cook on LOW for 7 hours, without opening the lid during the cooking time.

1 lb. ground beef
15 ounces Italian seasoned diced tomatoes
3.5 cups water or beef broth
2 cloves garlic
1 onion
3-4 carrots
4-5 potatoes (Choose yukon or red potatoes if possible.)
10 ounces frozen peas (optional)

Steps:

  • Heat a medium sized skillet over medium heat. Add the beef to the skillet, using a spatula to turn the meat and break it apart as it cooks. Transfer the cooked meat to the slow cooker.
  • Dice the carrots, onion, and potatoes. Mince the garlic.
  • Add all the recipe ingredients (except peas, if using) to your slow cooker and use a large spoon to mix everything together. Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours. If using frozen peas, add them in the last 30-45 minutes so that they cook through but aren't mushy. Test to make sure the vegetables are cooked through and tender, then season to taste with salt and pepper and serve.
  • Set your Instant Pot to Sauté mode. Add the beef and cook for about 5 minutes, breaking it apart and turning with a spatula as it cooks.
  • Dice the carrots, onion, and potatoes. Mince the garlic.
  • Add all the recipe ingredients (except peas, if using) to your Instant Pot. Cover and turn to High Pressure for 15 minutes. Allow for a Natural Pressure Release (do nothing and allow the pressure to naturally dissipate) for at least 10 minutes, then turn the steam release valve. Carefully open the Instant Pot.
  • If using frozen peas, stir them into the stew now. Set the Instant Pot back to Saute mode and cook together, stirring occasionally, for about 10 minutes.
  • Season to taste with salt and pepper and serve.
  • Place your dutch oven on the stovestop and turn the heat on the burner to medium. Add the ground beef. Cook for about 5-6 minutes, using a spatula to turn the meat and break the pieces apart as it cooks.
  • Dice the carrots, onion, and potatoes. Mince the garlic.
  • Add all the recipe ingredients (except peas, if using) to your dutch oven. Stir together. Bring to boil, then lower the heat, cover, and simmer for about 45 minutes, opening and stirring occasionally.
  • If using frozen peas, stir them into the stew the last 10-15 minutes.
  • Season to taste with salt and pepper and serve.

2 beef bouillon cubes or 1 tablespoon loose beef bouillon granules
1 large yellow onion
10 -12 baby carrots
1 lb ground beef
2 potatoes (optional)
salt
pepper
1/2-1 cup water

Steps:

  • Brown the ground beef drain and, add 1/2 to 1 cup water(depending on how much sauce you want).
  • add the carrots and let simmer on med./high heat until cooked halfway through. (can also add the potatoes at this point- quartered and quartered again.).
  • add the large onion cut into quarters and simmer on med./high heat for a little while longer.
  • when onions and veggies become tender you add your boullion and let melt down thoroughly, mixing well with the meat and veggies, and add your salt and pepper to suit your taste. Throw over some rice or noodles. (feeds 2 comfortably) Can also add cabbage, peas (whatever you like)and double all the ingredients except for the beef and make a nice hearty soup (or try this if you need to use it up for another night :) ).

1 lb ground beef
2 medium potatoes, peeled and cut small
2 medium carrots, peeled and cut small (or 1 cup baby carrots, more or less depending on preferance, cut in half)
1 (10 ounce) can cream of celery soup
1 (15 ounce) can kernel corn, drained reserving juice

Steps:

  • Boil water in a large pot.
  • Add carrots and potatoes and boil 10-15 minutes until tender.
  • Drain and set aside.
  • Meanwhile, brown meat in a large skillet.
  • Drain well.
  • Add 3/4 or full can of corn (depending on preferance) to meat.
  • In a small pot combine soup and corn juice (use less for thicker stew).
  • Heat over med-low until warm.
  • Add potato and carrots to meat.
  • Pour soup over top and stir gently.
  • Heat if neccesary.

1 can(s) campbell's tomato soup
soup can of water
2 potatoes, large dice (about 1/2 inch)
2 carrots, sliced 1/2 inch thick

1 can(s) tomato soup
1 can(s) cream of mushroom soup
2 c fresh carrots, peeled and chopped
