1 ½ pounds beef stew meat, cut into 1/2-inch cubes
2 (14 ounce) cans beef broth
1 (15 ounce) can green beans, drained
1 (15.25 ounce) can whole kernel corn, drained
1 (14.5 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (46 fluid ounce) bottle tomato-vegetable juice cocktail (such as V8®)
¼ teaspoon garlic powder, or to taste
¼ tablespoon onion powder, or to taste
salt and ground black pepper, to taste

Steps:

  • Mix beef broth and beef stew meat in a large pot over medium heat. Bring broth to a simmer, reduce heat to low, and cook beef at a simmer until tender, about 45 minutes.

1 medium onion, chopped
1 clove garlic, chopped
1 tablespoon olive oil
2 (14 1/2 ounce) cans vegetable broth or 2 (14 1/2 ounce) cans chicken broth
2 (14 1/2 ounce) cans diced tomatoes
1 (14 1/2 ounce) can green beans (undrained)
1 (14 1/2 ounce) can corn (undrained)
1 (14 1/2 ounce) can mixed vegetables (undrained)
1 (14 1/2 ounce) can beans (undrained, whatever is in the pantry that day)
1/4 cup rice
1 -2 bay leaf
dried basil, to taste
dried thyme, to taste

Steps:

  • Saute the onion and garlic in the olive oil.
  • Add the rest of the ingredients while seasoning to taste with the basil and the thyme.

2 to 3 pounds beef shanks
8 cups beef stock (unsalted or low sodium)
3/4 cup onion (chopped)
3/4 cup celery (chopped)
1/4 teaspoon pepper (coarsely ground)
1 bay leaf
Kosher salt (to taste)
2 (14.5-ounce) cans tomatoes (diced)
2 cups cabbage (shredded)
1 1/2 cups green beans (fresh cut or frozen)
1 1/2 cups potatoes (diced, raw)
1 cup carrots (thinly sliced)
2 teaspoons Worcestershire sauce
Optional: 1 teaspoon sugar

Steps:

  • Gather the ingredients.
  • In a large stockpot or Dutch oven , combine the beef shanks, beef stock, onion, pepper, bay leaf, and salt. Cover the pot and bring it to a boil over medium-high heat. Reduce the heat to low, and skim off and discard any foam. Simmer, partially covered, stirring occasionally, for 3 hours, or until the meat is mostly tender.
  • Remove the beef shanks from the soup. Skim excess fat from the surface of the soup with a ladle or spoon. Remove the meat from the bones, cut it into small pieces, and add it back to the broth. Add the tomatoes, cabbage, green beans, potatoes, carrots, celery, Worcestershire sauce, and sugar, if using. Continue to simmer for about 45 minutes longer, or until the vegetables and meat are tender. Taste and adjust the seasonings.
  • Remove the bay leaf and ladle the soup into bowls. Serve hot and enjoy.

1 lb round steak, stew meat or other cheap cut
1 large onion (approximately 2 cups)
3 Tbsp vegetable oil
3 medium carrots
3 stalk(s) celery, chopped
4 beef bouillon, cubes
16 oz tomatoes, canned
1/2 tsp marjoram, dried
1/2 tsp thyme, dried
1 tsp basil, dried
1/4 tsp rosemary, dried
1/4 tsp black pepper
1-2 bay leaves
16 oz frozen mixed vegetables, thawed
3-4 potatoes, peeled and diced

Steps:

  • 1. Cut meat into bite size pieces. Pour oil into large pot. Heat over medium high heat. Add meat and onions. Cook meat until browned on all sides.
  • 2. Add tomatoes, celery and seasonings. Cover with 3" of water. Bring to a boil, cover amd simmer on low heat for a minimum of 1-2 hours.

Loosely based on a gourmet cooking magazine's recipe for Beef Barley soup, I didn't have any barley or okra, so I added root veggies to make it more hearty, like a rich broth with the chunkyness of stew. It turned out to be the best soup I've ever made! DH, stepson and baby girl kept coming back for more.

1 lb beef stew meat
1 onion
3 celery ribs
10 baby carrots (or a couple regular carrots)
2 potatoes (peeled if you like)
1 cup frozen corn
1 cup frozen peas
2 (14 ounce) cans diced tomatoes (I use salt-free)
3 1/2 cups beef broth (or 2 14-oz cans)
2 small bay leaves
2 teaspoons garlic powder
2 tablespoons olive oil (or any cooking oil)
4 cups water
2 teaspoons hot pepper sauce

Steps:

  • Cut meat into small, bite-size (1/2") pieces.
  • In a large pot or dutch oven, saute meat in 1 T oil on medium-high heat until all sides are brown.
  • Set aside on a plate.
