Add 5 cups flour and mix with paddle attachment until smooth, about 2 minutes. Switch to hook attachment and knead on low speed, adding more flour if necessary until dough is stiff and slightly tacky, about 10 minutes.
- Grease a large bowl with butter and turn dough out into the bowl. Flip over dough so greased side is up, cover with plastic wrap or a kitchen towel and set in a warm, draft-free spot until doubled in size, about 1 1/2 to 2 hours. Generously butter two 9-x-5 loaf pans.
- When dough has doubled in size, turn it out onto floured surface and knead for 3 minutes. Return to greased bowl, cover and let rise again for 30 minutes.
- Press down dough with your hand to expel the air. Divide dough in half and place each half into a loaf pan. Brush tops of loaves with remaining melted butter.
- Cover and let rise until dough is just above the tops of pans, 45 minutes to 1 hour.

- 1. dissolve 2 packages yeast and 2 Tbsp sugar in 1 cup warm water.
- 2. Mix all ingredients to make a soft dough.
- 3. Put on a floured board and let rest for 10 minutes. Knead for 8 to 10 minutes.
- 4. Put in a large bowl, cover and let rise in warm room until double.
- 5. When doubled in size, poke it with 2 fingers to deflate. Cover and let rise again until double in size.
- 6. When doubled in size the second time, take the dough from the bowl and put on a board and cut into 5 equal pieces.
- 7. Knead each piece "Slightly" and place in greased pans to raise.
- 8. When risen, bake at about 325 degrees (depending on oven) for about 20 to 30 minutes until done. Bread will sound hollow when you tap on the crust top.
- 9. **For 1 loaf of Raisin Bread you can flattened out 1 loaf before placing in pans to rise, spread with 1 to 1 1/2 cups raisins, 3 Tbsp cinnamon and 1/2 to 1 cup sugar, roll up and place in greased pan to rise. Makes absolutely delicious raisin bread!! MMMmmmmmmm Enjoy!

Fold ends under loaf. Place seam side down in pan. Brush loaves lightly with butter. Cover and let rise in warm place 35 to 50 minutes or until double.

Stir until well blended. Add the rest of the flour, the salt and butter and stir with the dough hook (or by hand) until well combined. Continue to knead (if using a dough hook, run it for about 8 minutes, poking dough down once in awhile) until it's smooth and elastic. If you used the dough hook, turn the dough out onto the countertop and knead a few times by hand to make sure it's evenly smooth. Shape the dough into a ball and put it back into the bowl. Cover with a tea towel and let it sit for 1 to 1 1/2 hours, until it's doubled in size. Butter two 4-x8-inch loaf pans. Punch the dough down and pat each piece into a rectangle that's about 9-x12-inch - or a bit bigger than a standard piece of paper. Starting at a short end, fold it in thirds, like a letter. Place seam side down in the loaf pans, tucking the ends in. Cover with the tea towel again and leave them for an hour, until they puff right up out of the pan.
