Crockpot Tuscan Chicken is the perfect busy night meal! It is big on flavor and light on prep. Serve it over pasta or rice, or with a big slice of garlic bread.

3 lbs chicken breast (boneless, skinless)
6 cloves garlic (pressed)
1 tsp salt
1/2 tsp black pepper
14 oz can artichoke hearts (drained and quartered)
8 oz jar sun dried tomatoes packed in oil (with herbs)
8 oz baby spinach
1 onion (diced)

Steps:

  • Lay the chicken breast in the crock pot and season with salt, pepper and pressed garlic.
  • On top of the chicken combine the sun dried tomatoes (with oil and herbs,) artichoke hearts, and onion.
  • Cook on high for 2.5-3 hours, or low for 3.5-4 hours.
  • Once the chicken is cooked through (165˚F internal temp) open the crock pot and add the spinach on top. Leave the lid closed for 5-10 minutes to let the spinach wilt. Then stir it into the toppings.
  • Serve hot either as whole chicken breasts with the toppings, or shredded and mixed with the toppings. Enjoy!

I created this recipe because I wanted the ease of the crockpot AND wanted to use some spinach I had in the freezer. This recipe is great because you can use frozen ingredients!! I'm really proud of my creation because it's tasty, mostly healthy and everyone loved it! You can play around with the cheese toppings. I had planned to use Swiss, but used Monterey Jack instead because it was what I had on hand. I had also planned to use 1/4 cup of parmesan cheese, but only had 1/8 on hand, so that's what I used. I served the chicken whole, topped with spinach, mushrooms and cheese with a salad on the side.

5 frozen chicken breast halves
8 ounces canned sliced mushrooms, drained
4 tablespoons melted butter, divided
3 tablespoons dried onion
1/2 teaspoon garlic powder
10 ounces spinach, frozen and broken into pieces
1 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon nutmeg
1 cup sharp cheddar cheese, shredded
1/8 cup parmesan cheese, shredded
1 cup monterey jack cheese or 1/2 cup swiss cheese, shredded
1/8 cup Italian breadcrumbs

Steps:

  • Place frozen chicken breast halves into crock pot.

2 tablespoons unsalted butter
1 large yellow or red onion, finely chopped
Kosher salt and black pepper
3 celery stalks, chopped
8 garlic cloves, smashed and chopped
2 to 2 1/4 pounds boneless, skinless chicken thighs
1 cup chicken stock
1/2 cup white wine
1/2 lemon, juiced (about 1 1/2 tablespoons)
1 teaspoon red-pepper flakes
1 (10-ounce) package frozen cut spinach
1 (12-ounce) jar marinated artichoke hearts, drained (about 1 heaping cup artichoke hearts)
1/2 cup cream cheese (about 4 ounces)
1/2 cup finely chopped fresh dill
4 to 6 scallions, thinly sliced, for topping
Grated Parmesan cheese, for topping

  • In a large (12-inch) skillet over medium-high heat, melt the butter. Add the onion, season lightly with salt, and cook, stirring occasionally, until softened and translucent, about 5 minutes.   • Add the cream cheese and dill, and stir until the cream cheese melts.
  • Using the back of a spoon, press the chicken against the side of the pot to break it up into pieces. Taste and add more salt and black pepper, if necessary. Divide the stew among bowls and top with scallions and Parmesan.
