1 tablespoon olive oil
1 tablespoon butter
1 onion, diced
salt to taste
4 cloves garlic, minced
1 ½ cups very dry white bread crumbs
1 ½ cups milk
2 pounds ground chuck
½ cup chopped fresh flat-leaf parsley
2 ounces grated Parmesan cheese
2 large eggs, beaten
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
3 cups tomato sauce, or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Heat olive oil and butter together in a large skillet over medium-high heat. Saute onion with a pinch of salt in hot oil and butter until onion is golden brown and soft, 5 to 10 minutes. Add garlic and saute until fragrant, about 30 seconds. Remove skillet from heat and cool onion mixture to room temperature.
  • Place bread crumbs in a large bowl. Add milk and stir with a fork until combined. Let sit until all of the milk is absorbed into the breadcrumbs, 15 to 20 minutes.
  • Combine ground chuck, cooled onion mixture, parsley, Parmesan cheese, eggs, 2 teaspoons salt, black pepper, and cayenne pepper in a bowl. Grab a handful of breadcrumbs and squeeze very gently to remove excess milk. Repeat with remaining breadcrumbs, transfer breadcrumbs to ground chuck mixture, and discard excess milk. Stir ground chuck mixture until evenly combined.
  • Turn chuck mixture out into prepared baking dish, and shape meat into a 3x4x10-inch meatloaf. Pour tomato sauce over the loaf and into the bottom of the dish.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let meatloaf rest for at least 10 minutes before slicing.

1 1/2 cups ketchup
1 1/2 teaspoons apple cider vinegar
2 tablespoons sriracha hot chili sauce
2 tablespoons Worcestershire sauce
1 egg
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 teaspoon sweet paprika
4 cloves garlic, grated (on a rasp)
8 sprigs fresh thyme, leaves stripped and chopped
1/2 cup chopped Vidalia onion
1 scallion, minced
1 pound ground chuck, divided
1 pound ground dark meat turkey, divided
2 slices potato bread, lightly toasted and cut into 1/4-inch cubes, divided
Special equipment: 9 by 5-inch loaf pan

Steps:

  • Preheat the oven to 375 degrees F.
  • For the spicy ketchup sauce: Add the ketchup, vinegar and hot chili sauce to a bowl and stir. Reserve 1/2 cup for the meatloaf.
  • For the meatloaf: In a large bowl, whisk together the Worcestershire sauce, egg, salt, pepper, paprika, garlic, thyme, onions, scallions and reserved spicy ketchup sauce. Crumble half the chuck into the bowl, followed by some bread, then half the turkey pile on some more bread cubes. Repeat with the other half of meat and remaining bread. (So a half pound of crumbled chuck, some bread, then a half pound of ground turkey, some bread and repeat until done. Adding this way will make mixing easier and lighter for a juicier loaf.) Gently mix with 1 hand, bringing the egg mixture from the bottom to the top and around until everything is gently combined. Place into a 9 by 5-inch loaf pan, flatten the top and pour the remaining spicy ketchup sauce over the top evenly. Bake in the oven for 60 minutes. Remove and allow to rest for 10 minutes.
  • Tilt the loaf pan slowly to 1 corner and discard any excess fat or juices from the pan while holding the loaf inside. Don't worry, the meatloaf will still be juicy! Slice into 1-inch thick portions. Serve warm and if there's anything left, refrigerate it and enjoy a meatloaf sandwich for leftovers the next day.

2 lb ground beef
1 cup bread crumbs (plain or italian)
1/4 cup water
1 egg, beaten
1 tsp garlic powder
1 tsp onion powder
1 cup onion
salt and pepper to taste
2 cups ketchup, divided
1 cup brown sugar

Steps:

  • Preheat oven to 350 degrees F. Place the ground beef in a large bowl. Mix the bread crumbs, and water in separate bowl. Beat the egg in small bowl. Add all ingredients (except ketchup and brown sugar) in large bowl. Mix well (it's better to use your hands to make sure the mixture gets blended well). Once that is blended, add in 1 cup ketchup. Mix well.
  • Once you are done mixing, place into 13 X 9 baking dish. You can either keep it in a rectangular shape or make any other shape, but make sure you make a "gulley" down the center. Cover with aluminum foil.
  • Cook for 45 minutes. While the meatloaf is cooking take the remaining ketchup and mix with the brown sugar in small bowl.
  • Take off the aluminum foil, drain some water from the center (gulley) of the meatloaf. Add your mixture of ketchup and brown sugar to the top of the meatloaf. Leave off aluminum foil and cook another 30 minutes. Once done cooking, let the meatloaf sit for 15 minutes before you serve.
