1/2 lb lean ground beef
garlic powder (optional)
4 eggs, beaten
2 tablespoons extra virgin olive oil
2 tablespoons diced shallots or 2 tablespoons onions
1/2 teaspoon basil
1/2 teaspoon oregano
2 cloves garlic, minced
4 cups fresh Baby Spinach
salt (optional)
pepper (optional)

Steps:

  • Heat a large nonstick skillet over medium heat and begin to brown the beef.
  • Add the garlic powder halfway through cooking, if using.
  • When beef is browned, remove it from the pan, drain and set aside.
  • Use paper towels to wipe away the excess fat from the pan.
  • Heat olive oil in the pan over medium heat.
  • Add the shallots or onions and herbs and saute' 2 to 3 minutes.
  • Then add the garlic and saute' 2 to 3 minutes more.
  • Add the spinach, toss well to coat, and saute' until just wilted.
  • Add the hamburger, stirring to distribute ingredients evenly.
  • Pour the beaten eggs over all and stir gently until cooked.
  • Salt and pepper to taste.

1 lb ground beef (or ground turkey to make it even healthier)
1 (9 oz. bag) fresh baby spinach leaves (add more if you like)
1-2 Tbsp olive oil
1 small onion, diced
1/2 tsp basil
1/2 tsp oregano
2 tsp garlic powder or adobo brand seasoning (more if you like garlic!)
1/4 tsp salt
1/4 tsp black pepper
2-3 eggs (adjust to your liking)
sliced mushrooms (optional)

Steps:

  • 1. Spray skillet with non-stick cooking spray.
  • 2. Add ground beef and cook, stirring, until browned and crumbly. Drain well in a colander.
  • 3. Add onion to the skillet and cook until tender but not browned.
  • 4. Stir in basil, oregano, salt and pepper.
  • 5. Add spinach leaves, drizzle with olive oil, then add Adobo (garlic powder) and cook until spinach has reduced down. (Seems like a lot of spinach, but it cooks way down. If necessary, do it in batches)

6 large eggs
Splash or two of Tabasco or other hot pepper sauce
1 teaspoon salt or more to taste
1/2 teaspoon dried basil or oregano
1/2 teaspoon freshly milled black pepper or more to taste
1 tablespoon olive oil
1 tablespoon unsalted butter
1 medium yellow onion, diced
1/2 pound lean freshly ground beef, preferably chili grind (a bit coarser than hamburger grind)
3/4 to 1 pound fresh spinach, preferably the crinkly savoy variety, trimmed of stems and chopped, or one 10-ounce package frozen chopped spinach, thawed and drained

Steps:

  • Crack the eggs into a small bowl and add the Tabasco, salt, basil, and pepper. Whisk just enough to combine; you should still see large bubbles. Set aside.
  • Warm the oil and butter in a large skillet over medium heat until the butter melts. Add the onion and sauté until soft but not beginning to brown, about 4 minutes. Add the ground beef and continue cooking until uniformly brown, breaking the meat into small pieces as it cooks. Cover with the spinach, place a lid over the mixture, and cook for about 3 minutes, just until the spinach wilts. (If using frozen spinach, cook, covered, for 1 minute, just to take off its raw edge.)
  • Stir the spinach into the meat, cooking briefly to eliminate excess liquid if the mixture seems watery. Pour the egg mixture over all, stirring with a spatula from the bottom until the eggs begin to set. Remove from the heat and stir a few more times, as the eggs cook through from the residual heat. Steps:

It's an old recipe that makes the type of food we like to cook today -- hearty and healthful, quick and easy. It was introduced in San Francisco in the 1920s. There are many versions of this recipe but none on this site just like this one. Serve Joe's Special as a lunch or dinner meal, but it can also be a protein-filled breakfast dish, often with hash browns and toast on the side. Recipe is from our local food writer, Jan D'Atri.

2 tablespoons olive oil
1 medium yellow onion, diced
2 garlic cloves, minced
1 lb ground sirloin
1/2 lb mixed mushrooms, sliced
1/4 cup sherry wine (optional)
2 cups fresh spinach, roughly chopped
2 green chilies, roasted, peeled, and diced (fresh, medium sized, 0pt., may substitute canned if you wish)
4 -6 eggs, beaten
1/2 cup parmesan cheese, grated
1/4 teaspoon ground nutmeg
1/2 teaspoon oregano
salt and pepper

Steps:

  • In a heavy skillet over medium heat, cook onions and garlic in olive oil until tender and translucent.
  • Add crumbled ground sirloin and cook until the beef is almost browned.
  • Stir in sliced mushrooms. Add sherry, if desired, and cook about one minute. Mix in spinach and seasonings and stir well.

There are many different versions of this, and we love to eat this with tabasco sauce and sometime along with ketchup drizzled over it. The kids like this with ketchup (of course). I've always eyeballed the seasonings, and relied on the hot sauce, so do adjust to your taste (add more seasonings if you don't use hot sauce or ketchup)!

1 lb ground beef
8 ounces brown button mushrooms, quartered
8 ounces frozen chopped spinach, well drained
3 tablespoons olive oil
1 onion, chopped
3 garlic cloves, minced
1/4 cup dry red wine
1 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
2 tablespoons italian seasoning
1 teaspoon garlic powder
1 tablespoon Worcestershire sauce (eyeball it)
2 eggs, lightly beaten

Steps:

  • Heat skillet, sautee chopped onions until softened, add garlic.
  • Meanwhile, in another skillet, heat and add olive oil, add mushrooms and sautee a few minutes. Season with some salt and pepper, add red wine. Simmer with lid slightly open.
  • Add ground meat to the onions, season with salt, pepper, Italian Seasonings, garlic powder, and brown the meat.
  • When meat is almost cooked through, add spinach and the entire skillet of mushrooms and juices, add worchestershire. Cook through. Turn heat to low and add eggs, stir and cook until set. Adjust seasonings to taste.
