JO MAMA'S SWEET POTATO PIE

Jo Mama's Sweet Potato Pie image

I have been on a quest to find the best (at least my family's favorite) sweet potato pie. This has been the reigning champion to all since 1992. At Thanksgiving, I cook it and a new contender each year. I am adding strong contenders to my cookbook as well.

Time 1h45m

Yield 8 serving(s)

Number Of Ingredients 9

1 1/2 cups mashed, cooked sweet potatoes
1/2 cup butter, softened
4 eggs
1 cup granulated sugar or 1 cup brown sugar
1 1/2 teaspoons freshly grated nutmeg
1 1/2 teaspoons vanilla
1 dash cinnamon
1/2 cup milk
1 unbaked 9-inch pie crust

Steps:

  • Blend sweet potatoes with butter.
  • Add eggs, sugar, nutmeg, vanilla and cinnamon; stir in milk.
  • Turn into pastry shell and bake at 350 degrees for 1 1/2 hours.

Tips:

  • Choose sweet potatoes carefully: Select firm, unblemished sweet potatoes with a deep orange color. Avoid any with cuts, bruises, or soft spots.
  • Prick the sweet potatoes before baking: This helps the steam to escape and prevents the potatoes from bursting.
  • Bake the sweet potatoes until they are tender: Insert a fork or toothpick into the center of the potato. If it slides in easily, the potato is done.
  • Let the sweet potatoes cool slightly before handling: This will help prevent them from breaking apart.
  • Use a food processor or blender to make the sweet potato puree: This will help to ensure a smooth and creamy texture.
  • Season the sweet potato puree to taste: Add spices, such as cinnamon, nutmeg, and ginger, to taste.
  • Use a pre-made pie crust or make your own: If you are making your own pie crust, be sure to chill it before baking.
  • Pour the sweet potato puree into the pie crust and bake: Bake the pie at 350 degrees Fahrenheit for 45-50 minutes, or until the crust is golden brown and the filling is set.
  • Let the pie cool before serving: This will help the filling to firm up.

Conclusion:

Sweet potato pie is a delicious and comforting dessert that can be enjoyed year-round. With its creamy, flavorful filling and flaky crust, it is sure to be a hit with everyone. Whether you are making it for a special occasion or just as a weeknight treat, sweet potato pie is sure to please.
