1 pkg jimmy dean premium pork roll sausage
1 c chopped onion
2 can(s) diced tomatoes, un-drained (14.5 oz each)
1 can(s) kidney beans, drained and rinsed (15 oz)
1/2 c water
1 1/4 oz taco seasoning mix
10 c tortilla chips
2 c cheddar cheese, shredded
sour cream (optional)

Steps:

  • 1. Preheat oven to 350°F. Cook sausage and onion in large skillet over MEDIUM-HIGH heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. Return sausage mixture to skillet.
  • 2. Add tomatoes, beans, water and seasoning mix; stir. Bring to a boil. Reduce heat to MEDIUM-LOW; simmer 10 minutes or until slightly thickened, stirring occasionally.
  • 3. Place broken tortilla chips in lightly greased 13x9-inch baking dish; cover with layers of 1 cup cheese, sausage mixture and remaining cheese.
  • 4. Bake 30 minutes. Cut into 8 squares. Serve topped with sour cream and cilantro, if desired.

1 pkg. taco seasoning mix (1 1/4 ounces)
10 cups restaurant style tortilla chips (10 ozs) coarsely broken
2 cups shredded cheddar cheese (8ounces)
sour cream
chopped fresh cilantro

Steps:

  • Preheat oven to 350 F. Cook sausage and onion in large skillet over Med-high heat 8-10 minutes or until sausage is thoroughly cooked, stirring frequently; drain. This is a great make-ahead breakfast for a crowd. I take it to potluck breakfast events and it just disappears! When I can find it, I use a soft chorizo that is not in casings. Otherwise, I use the hot Jimmy Dean variety.

12 ounces breakfast sausage
1 lb Velveeta cheese, cubed
10 ounces diced Rotel tomatoes & chilies
3 cups frozen tater tots
8 eggs
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
corn tortilla (optional)
sour cream (optional)
salsa (optional)

Steps:

  • Cook the breakfast sausage until it is done and crumbly.
  • Drain off the excess fat (If you used chorizo, drain off LOTS of excess fat).
  • In a 9x13-inch rectangular baking pan, start by layering the tater tots on the bottom.
  • Then sprinkle the cooked sausage crumbles.
  • Then place dollops of the chilies and tomatoes evenly around the pan (I don't drain them, but you can if you want a milder flavor).
  • Evenly distribute the cubes of Velveeta.
  • Place your 9x13-inch pan into a slightly larger jelly roll pan (has sides) to catch any spills or overflow.
  • Now beat the eggs, salt, and pepper.
  • Pour the eggs over the tater tots, sausage, and cheese.
  • Cover and bake for 30 minutes at 350°F
  • The eggs should be soft-set in the middle.
  • At this point you can refrigerate the dish.
  • Finish by baking uncovered for 15-20 minutes at 350°F.
  • Serve with warm corn tortillas, salsa, and sour cream.
  • Allow everyone to make their own breakfast tacos, or simply dish and eat.

10 eggs, lightly beaten
3 cups milk
2 teaspoons dry mustard
1 teaspoon salt
6 cups cubed bread
2 cups shredded sharp Cheddar cheese
½ teaspoon black pepper
½ cup sliced mushrooms
1 medium tomato, seeded and chopped
½ cup thin-sliced green onion

Steps:

  • Preheat oven to 325 F. In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, combine eggs, milk, mustard and salt; stir well.
  • Distribute half the bread evenly in a buttered 9 x 13 x 2 inch baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half of each optional ingredient.
