Time 1h50m

Number Of Ingredients 7

1 can(s) whole corn, drained (17 oz)
1 can(s) cream corn
1 c sour cream
1/2 c margarine, melted
1 c cheddar cheese, shredded
1 box jiffy mix, cornbread muffin mix
2 large eggs

Steps:

  • 1. Preheat oven to 300 degrees F. Be sure to drain the can of whole corn. Then combine all ingredients in a large bowl and mix thoroughly. Pour into a 2-quart casserole dish, sprayed with cooking spray. Bake at 300 degrees F for 1 hour 40 minutes. Notes For some added zing, add prepared green or hot chiles to the mixture

Tips:

  • Jiffy Cornbread Mix: This is a key ingredient in this recipe, providing the base for the casserole. Ensure you use fresh mix for the best results.
  • Buttermilk: Buttermilk adds a tangy flavor and helps keep the casserole moist. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
  • Sweet Corn: Fresh or frozen sweet corn can be used in this recipe. If using frozen corn, thaw it completely before adding it to the casserole.
  • Sour Cream: Sour cream adds richness and creaminess to the casserole. You can substitute Greek yogurt if desired.
  • Green Chilies: These add a mild spicy flavor to the casserole. If you don't like spicy food, you can omit them or use a milder variety of chili peppers.
  • Cheese: A blend of cheddar and mozzarella cheese is used in this recipe. You can use other types of cheese if desired, such as Monterey Jack or pepper Jack.
  • Eggs: Eggs help to bind the ingredients together and give the casserole a custard-like texture.
  • Seasonings: Salt, pepper, and garlic powder are used to season the casserole. You can adjust the amount of each seasoning to suit your taste.
  • Cooking: The casserole is baked in a 9x13 inch baking dish until golden brown and a toothpick inserted in the center comes out clean. This usually takes about 30-35 minutes.
  • Serving: Serve the casserole hot with your favorite sides, such as chili, soup, or salad.

This Jiffy cornbread casserole is an easy and delicious side dish that is perfect for any occasion.
