We always make this at Thanksgiving! This is NOT the "souffle" type corn pudding that most people make. I am a CORN fanatic, so I love this recipe. Is great for Thanksgiving, but is easy enough to make for an everyday meal.

Time 55m

Number Of Ingredients 5

1 box jiffy corn bread mix
1 can(s) whole kernel corn (drained)
1 can(s) cream style corn
8 oz sour cream
1 stick butter

Steps:

  • 1. Melt butter in mixing bowl.
  • 2. Add both cans of corn, and sour cream. Mix well.
  • 3. Add Jiffy mix and mix well.
  • 4. Bake 9in 8x8 pan for 45 minutes at 350 degrees.

Tips:

  • Choose fresh corn. Fresh corn on the cob is best for this recipe, but you can also use frozen or canned corn if necessary. If using frozen corn, thaw it before using.
  • Use a good quality corn muffin mix. Jiffy corn muffin mix is a classic, but you can also use another brand of corn muffin mix if you prefer. Just make sure that the mix is fresh and has not expired.
  • Don't overmix the batter. Overmixing the batter will make the corn pudding tough. Just mix until the ingredients are combined.
  • Bake the corn pudding until it is set in the center. A toothpick inserted into the center of the pudding should come out clean when it is done.
  • Serve the corn pudding warm or at room temperature. Corn pudding is best served warm, but it can also be served at room temperature. It is a great side dish for any meal.

Conclusion:

Jiffy corn pudding is a classic Southern dish that is easy to make and always a hit. It is a great way to use up fresh corn on the cob, and it is also a delicious side dish for any meal. Whether you are serving it for a holiday dinner or a weeknight meal, Jiffy corn pudding is sure to be a crowd-pleaser.
