I've seen different versions of this recipe floating around but I prefer this one. If you want to jazz it up you can add cheese or jalapenos. The possibilities are endless.

JIFFY CORN CASSEROLE

Use my recipe if you don't have any Jiffy Corn Mix on hand. It is posted below within Directions. Thank you!

Provided by Susan Cutler

Categories     Side Casseroles

Time 1h

Number Of Ingredients 6

1 can(s) whole kernel yellow corn, undrained
1 can(s) cream style yellow corn
1 (8 oz.) carton sour cream
2 eggs, beaten
1 box jiffy corn muffin mix or homemade jiffy corn mix-see below my posting
1 stick butter, melted

Steps:

  • 1. Mix all together and pour into large, lightly oiled casserole dish. Bake at 350°F for 55 to 60 minutes.
  • 2. **Homemade Jiffy Corn Mix Ingredients 2/3 c all-purpose flour 1/2 c yellow cornmeal 3 Tbsp granulated sugar 1 Tbsp baking powder 1/4 tsp salt 2 Tbsp vegetable oil OPTIONAL INGREDIENTS 1/2 c grated cheddar cheese (optional) 2 oz canned chillies (optional) 1/4 c drained chopped pimiento (optional) 1/2 c chopped onion (optional)
  • 3. 1 Combine first 5 ingredients in a bowl, mix well. 2 Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone. 3 If another recipe is calling for a box of Jiffy Corn Muffin Mix, add the above mixed ingredients to that recipe. 4 OPTIONAL: To mix, add any combination of optional ingredients you prefer. 5 Combine mix with egg and milk, mixing well. (see my posting for Homemade Jiffy Corn Mix for Directions for other recipes.)

Tips:

  • Use fresh corn: Fresh corn gives the casserole a sweeter, more vibrant flavor. If you're using frozen corn, thaw it completely before adding it to the casserole.
  • Don't overcook the corn: Overcooked corn will become tough and chewy. Cook the corn just until it is tender-crisp.
  • Use a good quality cheese: The cheese is one of the most important ingredients in this casserole, so use a good quality cheddar or Monterey Jack cheese. Avoid using pre-shredded cheese, as it doesn't melt as well.
  • Add some spice: If you like a little bit of heat, add a pinch of cayenne pepper or chili powder to the casserole. You can also add some chopped jalapeños or green chilies.
  • Bake the casserole until it is golden brown: The casserole is done baking when it is golden brown on top and bubbly around the edges.

Conclusion:

Jiffy corn casserole is a classic Southern dish that is perfect for potlucks, picnics, and holiday gatherings. It is easy to make and always a crowd-pleaser. With its sweet corn, creamy cheese, and crispy topping, this casserole is sure to be a hit at your next gathering.
