Deborah Madison, in her wonderful new cookbook, "Vegetable Literacy," put a new spin on millet that may have changed my millet-cooking life forever. She suggests cooking the grain as you would a polenta, which it kind of resembles when it's cooked, with most of the grains breaking down to a mush while others remain crunchy. I'd always been a bit flummoxed by this uneven cooking and the texture of the broken-down millet (it's a bit chalky). But serving it like a polenta makes perfect sense. You can serve it soft, right after it's cooked, or let it set up and then slice it and crisp the slices or use them in gratins, as I do with cornmeal polenta. I was so taken with this idea that I decided to cook the millet in the oven, the way I do for my easy cornmeal polenta, after first toasting it in the pan. It worked beautifully.

1 cup millet
1 teaspoon salt
1 tablespoon butter (more to taste)
1/3 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 350 degrees. Heat a 10-inch cast-iron skillet over medium-high heat and add the millet. Toast, stirring or shaking the pan, until the grains begin to pop and smell toasty, sort of like popcorn. Add the water or stock and the salt.
  • Transfer the pan to the preheated oven. Set the timer for 25 minutes and give the millet a stir. Bake for another 25 minutes. There should still be some liquid in the pan. Stir in the butter and bake for another 5 to 10 minutes, until the millet is thick and no more water or stock is visible in the pan. Remove from the oven; if desired, stir in the Parmesan. Serve right away, topped with tomato sauce or a stew. Alternatively, allow to cool, either in the pan or spread in a small sheet pan, baking dish or cake pan; when it is solid, cut into squares, slices or rounds, which you can grill, fry or layer in a gratin.

1 large yellow onion, peeled
2 jalapeños
1 1/2 cups buttermilk
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
Plenty of freshly ground black pepper
Canola oil, for frying

Steps:

  • Cut the onion in half and then into wedges. Separate the onion layers and add them to a bowl. Slice the jalapeños (seeds and all if you like things spicy) into very thin rounds and add to the bowl. Pour over the buttermilk and stir to combine. Let sit while you get the remaining ingredients together.
  • Combine the flour, salt and a generous pinch of black pepper in a separate bowl, then set aside.
  • Add 1 inch of oil to a large, heavy-bottom skillet. Heat to 375 degrees F or until a pinch of the flour sizzles when added to the skillet.
  • Using tongs, remove a handful of onions and jalapeños from the buttermilk and immediately dunk into the flour mixture, thoroughly coating them. Tap them on the inside of the bowl to shake off the excess.
  • Carefully add the coated onions and jalapeños to the hot oil, breaking them up with a spoon, so they don't stick together. Cook until golden brown, 1 to 2 minutes.
  • Remove with a slotted spoon and drain on a paper-towel lined plate. Repeat with the remaining onions and jalapeños.

20 ounces red pearl onions
1/3 cup Sherry vinegar
1/4 cup water
2 tablespoons sugar
1 tablespoon unsalted butter
1 Turkish or 1/2 California bay leaf
1 1/2 cups seedless red grapes (about 1/2 pound)

Steps:

  • Preheat oven to 425°F with rack in middle or lower third.
  • Blanch unpeeled pearl onions in boiling water 2 minutes. Drain and transfer to an ice bath to stop cooking. Peel onions and trim off root ends.
  • Bring onions, vinegar, and water to a simmer in an ovenproof 12-inch heavy skillet with sugar, butter, bay leaf, 1/2 teaspoon salt, and 1/4 teaspoon pepper, stirring until sugar has dissolved. Cover and simmer 3 minutes.

I love the way the firm, round grains stand up against the soft, brothy beans in this bean and amaranth stew. You can find amaranth at many farmers' markets and Asian markets. The beautiful purple and green leaves are high in anthocyanins, known for their antioxidant properties, as are black beans. Substitute baby spinach if you can't find it.

1 pound (2 1/8 cups) black beans
1 tablespoons grapeseed or canola oil
1 medium onion, chopped
2 to 4 garlic cloves, to taste, minced
2 or 3 epazote sprigs, if available
1/4 cup chopped cilantro, plus sprigs for garnish
Salt to taste
1 cup sorghum
1 generous bunch amaranth, stemmed and coarsely chopped (an 8-ounce bunch, 6 cups chopped)
1 large ripe Hass avocado, sliced or diced
Crumbled queso blanco or feta for garnish (optional)

Steps:

  • Rinse the black beans, pick them over for stones, and place them in a bowl. Cover with 2 quarts water and soak for 4 hours or longer. Do not drain.
  • Heat the oil over medium heat in a large, heavy soup pot or Dutch oven and add the onion. Cook, stirring, until it is tender, about 5 minutes, and add half the garlic. Cook, stirring, until fragrant, about 1 minute, and add the beans and soaking water. They should be covered by at least an inch of water, preferably 2 inches. Add more water as necessary, and bring to a boil. Reduce the heat to low, and skim off any foam that rises. Add the epazote and/or half the cilantro. Cover and simmer 1 hour.
  • Add salt to taste (2 to 3 teaspoons), the remaining garlic and remaining cilantro. Continue to simmer another hour, until the beans are quite soft and the broth is thick and fragrant. Taste and adjust salt.
  • While the beans are simmering, cook the sorghum. Rinse and combine with 3 cups water in a saucepan. Add salt to taste (I use 1/2 to 3/4 teaspoon) and bring to a boil. Reduce the heat, cover and simmer 50 minutes, until the grains are tender. Pour off any liquid remaining in the pot (save for stocks if desired) and return the grains to the pot. Cover until ready to use.
  • When the beans are ready, stir in the amaranth leaves and simmer for 10 minutes, until the leaves are tender.
  • Divide the sorghum among 6 wide or deep bowls. Top with black beans and amaranth. Garnish with sliced or diced avocado and chopped cilantro. If you want some spice, add a little salsa or minced green chili. Sprinkle feta or queso blanco over the top and serve.
