Time 25m

Yield 4 servings (8 fajitas)

Number Of Ingredients 14

1 tablespoon chili powder
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 yellow bell peppers, quartered
1 red bell pepper, quartered
1 yellow onion, cut into thick rounds
1 bunch scallions, trimmed
2 tablespoons olive oil
1 pound peeled and deveined large shrimp, tails removed
8 small flour tortillas, warmed
For serving: sour cream, shredded iceberg lettuce, guacamole, shredded cheese and lime wedges

Steps:

  • Preheat a grill to medium-high heat.
  • In a small bowl, combine the chili powder, sugar, garlic powder, onion powder, salt and pepper.
  • Use a pastry brush to coat both sides of the peppers, onions and scallions with some of the oil, then sprinkle with a quarter of the spice mix. Pat the shrimp dry with a paper towel, then brush with the remaining olive oil and season with the remaining spice mixture.
  • Grill the peppers, onions and scallions until grill marks appear, 3 to 4 minutes per side. Remove to a cutting board. Add the shrimp to the grill and cook just until they turn pink and begin to curl, about 2 minutes per side. Coarsely chop the vegetables and shrimp.
  • Serve with the warm flour tortillas (I like to wrap a stack of tortillas in foil and warm on the grill) and sour cream, lettuce, guacamole, cheese and lime wedges.

This is a twist on a classic recipe using shrimp instead of beef or chicken. I use regular old taco seasoning to make it easier, but any seasoning combination for fajitas will work. Serve with refried beans and Spanish rice to make an easy meal!

JERK SHRIMP FAJITAS

Jerk Shrimp Fajitas image

This is a recipe I made up for a quick weeknight meal. Over time, it evolved into something I'm proud enough to share with you all. Please do not use a non-stick pan. You could try substituting the shrimp for chicken or fish and the pineapple or mango salsa for your favorite variety. Like most Caribbean recipes I like the combination of hot, sweet, savory, and sour in one dish. Enjoy!

Categories     One Dish Meal

Time 50m

Yield 6 Fajitas, 3 serving(s)

Number Of Ingredients 15

1 lb shrimp, medium, raw, peeled
2 limes, juice of
3 garlic cloves, minced
3 tablespoons jerk seasoning (more or less, depending on taste)
2 tablespoons regular olive oil (not extra virgin)
1 green bell pepper
1 red bell pepper
1 onion
1 glass wine or 1 glass water, on hand for deglazing the pan if needed
1/4 cup sour cream
1 dash cayenne pepper
2 tablespoons milk
1/4 cup mango salsa or 1/4 cup pineapple salsa
3 sprigs cilantro
6 large tortillas (burrito size)

Steps:

  • 1. Combine the shrimp, lime juice, garlic, Jerk Seasoning, and 1 T of the olive oil in a small bowl or ziploc bag to marinate.
  • 2. Meanwhile, heat the other 1 T olive oil in a large saute pan over medium-high heat.
  • 3. Slice the green and red bell peppers and add them to the hot pan.
  • 4. Slice the onion and add it to the pan. Stir occasionally.
  • 5. As the vegetables are cooking, prepare the condiments as follows:.
  • 6. Mix the sour cream, cayenne pepper, and milk together in a small bowl.
  • 7. Chop the cilantro.
  • 8. Open the jar of salsa and put a spoon in it. :-).
  • 9. When the vegetables are nicely browned and a nice fond has developed on the pan, add the shrimp mixture and scrape the pan to deglaze, stirring frequently. Use your beer, wine, or water to add moisture to the pan only if needed. (Otherwise it will get too runny, ick).
  • 10. While shrimp is cooking, cover the tortillas with damp paper towels on a plate and microwave for 1 minute.
  • 11. When the shrimp are opaque and the liquid is mostly absorbed, remove from heat.
  • 12. Scoop fajita filling onto warm tortillas and top with sour cream mixture, salsa, and cilantro. Wrap, burrito style and serve.

Tips:

  • Choose the right shrimp: Use fresh, large, and peeled shrimp for the best results.
  • Make sure the shrimp is properly deveined: Deveining the shrimp removes the digestive tract, which can be gritty and unpleasant to eat.
  • Use a flavorful marinade: The marinade is what gives the shrimp its delicious flavor. Be sure to use a marinade that contains a good balance of spices and herbs.
  • Cook the shrimp properly: Jerk shrimp should be cooked quickly over high heat. Overcooking will make the shrimp tough and rubbery.
  • Use fresh vegetables: Fresh vegetables will add color, flavor, and crunch to your fajitas.
  • Warm the tortillas before serving: Warming the tortillas will make them more pliable and easier to fold.
  • Serve the fajitas with your favorite toppings: You can serve the fajitas with any number of toppings, such as salsa, guacamole, sour cream, and cheese.

Conclusion:

Jerk shrimp fajitas are a delicious and easy-to-make meal that is perfect for any occasion. The jerk marinade gives the shrimp a unique and flavorful taste, and the fajitas are a great way to enjoy this delicious seafood. Whether you are serving them for a party or a weeknight dinner, jerk shrimp fajitas are sure to be a hit.
