JELLO SHEET (POKE CAKE) CAKE FROSTING
This is the original recipe for the Jell-o sheet cake frosting from the 1970's. I had to search Mom's recipes to find it as the new recipe just uses Cool Whip alone. The only change it to Cool Whip from dream whip to save a step. Everyone loves it.

- combine ingredients except the Cool Whip in a medium bowl and beat on low until well blended, about 1 minute.
- Fold in Cool Whip topping.

- 1. Bake cake mix according to box directions. Set cake aside to cool well. Prepare jello according to box directions using 1/2 cup "less" cold water... cool in refrigerator until jello is barely tacky (do not let it set up). Using a wooden skewer poke approx 40 holes throughout entire cake ... with a tablespoon pour into holes the jello water ... some will run over but that is ok. Cover cake with saran wrap, refrigerate until cool and jello is set up. Frost cake with Cool whip topping . Serve and Enjoy.
- 2. Note: keep leftover cake refrigerated Suggestion: You can use any flavor jello ... if making a layer cake, you can use a different flavor jello for each layer.

The cake is the standard jello poke cake, you can use white or yellow cake mix and any flavor of jello to make it in the flavor of your choice. The frosting I use is included in the link below too. These is a great summer cake or to serve when kids are around- simple and delicious!

- 1. Preheat oven as directed on cake mix box. Follow directions for making a 9X13 cake including all ingredients called for on the box. Bake cake as instructed.
- 2. About 5 minutes before the cake is done, in a small bowl, mix jello powder and 1 1/4 cup hot water. Stir until dissolved. NOTE: You do not use the amount of water called for to make regular jello.
- 3. When cake is done, let it cool 5 minutes. Poke the cake with a fork or a kebab pole all over the top of the cake going down to the bottom of the pan. Make sure you get the edges and corners.
- 4. Using a tablespoon, slowly drip the dissolved hot jello over the cake, taking care to get all of the holes. Cool cale completely and put in refrigerator to continue to cool and set- about 4 hours.
- 5. I use this frosting on my poke cakes. I sometimes match the flavor but you can mix it up to make it match holiday colors, shower color or birthday party colors. - Bake cake mix in a 9x13 pan according to package directions. While cake is still warm, poke holes in the top of the cake using the handle of a wooden spoon. You could use a fork, but I like nice, big holes for the pudding to fill up. Mix Jello with boiling water until completely dissolved and pour over cake. Allow cake to cool completely. Mix pudding and milk and pour over the top of cooled cake. Chill for several hours -- overnight is best. Before serving, frost with Cool Whip.

- Prepare and bake cake according to package directions for a 2 layer round cake. Place cooled cake layers, top-sides up, in clean 8 or 9-inch round pans; pierce with large fork at 1/2-inch intervals. In separate bowls, add 1 cup boiling water to each flavor dry gelatin mix. Stir 2 minutes or until completely dissolved. Slowly pour 3/4 of the red gelatin mixture over 1 cake round and 3/4 of the lime gelatin over second cake layer. When pouring the Jell-O over the cake layers it will look like the whole cake is saturated with color, but the gelatin mixture will only enter the holes that you made with the fork. Discard the remaining jello or save for another purpose. Frost cake layers with whipped topping or Cool Whip frosting. Add sprinkles. Refrigerate cake at least 1 hour before serving.

This cake is really good ..basically its a poke cake but done with Jello laced with liquor (Jello shots). This cake is really neat when done with more than one color of Jello , It looks like a rainbow cake . Don't eat too much or it can catch up to ya ...hahaha Great for a adult gathering.

- 1. Mix the Pkg. cake mix according to the box directions but cook it in a Bundt pan. 350° for 38-43 minutes. Cool.
- 2. To make the Jello Shots mix the package of Jello with boiling water until all the Jello is dissolved ; add liquor of your choice.( I like vodka or rum )
- 3. Remove the cake from the pan ; Wash and dry the pan and spray with veg. spray so the cake won't stick to the Bundt pan ; Put the cake back in the pan.
- 4. Poke holes in a zig zag pattern around the cake , about 1" apart with the handle of a wooden spoon and Carefully pour the Jello in the holes.
- 5. Place the cake in the refrigerator to set the Jello for about 3-4 hours. Invert onto a plater ; and serve :)
- 6. I like to mix up 2 different flavors of Jello ( Don't mix the flavors of alcohol )and pour a different flavor in every other hole ; makes it prettier and more potent ...enjoy
