JELLO SHEET (POKE CAKE) CAKE FROSTING
This is the original recipe for the Jell-o sheet cake frosting from the 1970's. I had to search Mom's recipes to find it as the new recipe just uses Cool Whip alone. The only change it to Cool Whip from dream whip to save a step. Everyone loves it.

- combine ingredients except the Cool Whip in a medium bowl and beat on low until well blended, about 1 minute.
- Fold in Cool Whip topping.

JELLO WHIP FROSTING
I'm a big fan of using Jello Instant Pudding and Cool Whip as a frosting for cupcakes, so I assumed there must be a typically-used fruity Instant Jello equivalent. Long story short, there was not. I put this together using some of the bits and pieces of recipes I could find, and some spur-of-the-moment thinking when I thought it was going to go all wrong. My first attempt was using raspberry flavour on chocolate cupcakes, but experiment with different flavours and see what you like best!

- Stir 1 package of jelly powder in 1/2 cup boiling water for 2 min., until dissolved.
- Add enough cold water to 1/2 cup ice cubes to make up 3/4 cup. Stir into jelly powder until ice is completely melted.
- Whisk in 1 1/2 cups Cool Whip Topping with a wire whisk.
- Refrigerate approximately 1 hour, or until it is no longer liquid (more like a mousse consistency).
- Break up the mixture a little bit with a spatula.
- Gently fold in remaining 1/2 cup of Cool Whip, blending until desired consistency is reached.
- Frost cakes or cupcakes using a knife, spatula or piping bag - whatever you use for normally frosting cakes!
JELLO AND COOL WHIP FROSTING
Easy and yummy frosting - good on angel food cake. I don't know where Mom got this recipe (maybe she made it up), but this was our most requested cake and frosting for birthdays.

- Make jello as directed on package except using 3/4 cup boiling water instead of 1 cup so the jello is a little thicker.
- After jello is set, beat with mixer until there are small pieces. Add cool whip and beat until completely mixed. Spread on angel food cake. Keep refrigerated until time to serve.

- 1. Preheat oven as directed on cake mix box. Follow directions for making a 9X13 cake including all ingredients called for on the box. Bake cake as instructed.
- 2. About 5 minutes before the cake is done, in a small bowl, mix jello powder and 1 1/4 cup hot water. Stir until dissolved. NOTE: You do not use the amount of water called for to make regular jello.
- 3. When cake is done, let it cool 5 minutes. Poke the cake with a fork or a kebab pole all over the top of the cake going down to the bottom of the pan. Make sure you get the edges and corners.
- 4. Using a tablespoon, slowly drip the dissolved hot jello over the cake, taking care to get all of the holes. Cool cale completely and put in refrigerator to continue to cool and set- about 4 hours.
- 5. I use this frosting on my poke cakes. I sometimes match the flavor but you can mix it up to make it match holiday colors, shower color or birthday party colors. - Preheat oven to 350 degrees.
- For cookies: Cream margarine, sugar, and box of jello.
- Mix in one egg at a time, then add milk and vanilla and beat well.
- Add dry ingredients.

- Place the above ingredients in a large GLASS OR METAL mixing bowl (OF A STAND MIXER). Turn the mixer on high just as you add ½ cup of boiling water. Whip on high for five minutes NOTE: This recipe only seems to work if you use a stand mixer, with whisk attachment. Also, make sure you use a glass or metal mixing bowl, do not try this with a plastic bowl. NOTE: Some people have commented that they don't think raw egg whites are safe for children to eat. The egg whites in this recipe are no longer raw after you add the BOILING WATER. NOTE: This recipe makes enough to frost 24 cupcakes, or a 9 x 13 cake. If you are going to do any piping or edges, you might have to double the recipe. NOTE: This frosting pipes beautifully and holds its shape well. Like any 7 minute type frosting, it does get a little sticky/tacky the second day, so its best if you make it the day you want to serve it. If you have to make it the night before, just store it in an airtight container that doesn't touch the frosting. NOTE: This frosting has so many fun possibilities for birthday cakes/cupcakes. It would also make a wonderful filling.
