JELLO SHOTS: CHOCOLATE FUDGE RUM CHATA PUDDING

Jello Shots: Chocolate Fudge Rum Chata Pudding image

I tried these last night at a Christmas party and just HAD to get the recipe before I left. Super easy and oh so delicious! They taste just like chocolate mousse. I'm not exactly sure how many shots this makes, it all depends on the size of plastic shot glasses/containers used. I'm making a batch tonight, just for fun, but I'm going to fill parfait glasses with it for a Christmas eve dessert (for the grown-ups). I will make it the same way for the kids, only a "virgin" alternative, replacing the booze with more milk. I hope you enjoy! *Note: If you've never heard of "Rum Chata", just google it. It's a rum liqueur. (The stupid ingredient list keeps posting it incorrectly). I've drank "Rum Chata", before as a sipper, but I've also been told that it's great as an alternative to creamer in your morning coffee for a quick "hang-over" cure.

1 (4 ounce) package jello chocolate fudge instant pudding mix
1 cup milk
1 cup rum, chata
1 (8 ounce) container Cool Whip Topping (thawed in fridge)

8 ounces baker's semi-sweet chocolate baking squares, divided
1/2 cup butter margarine, divided
1/3 cup water
1 (3 1/2 ounce) package jello chocolate flavor instant pudding and pie filling mix
3 cups powdered sugar

Steps:

  • Microwave 4 of the chocolate squares, 6 TBSP of the butter and water in large microwaveable bowl on High for 2 minutes or until butter is melted, stir. Add dry pudding mix; stir until well blended.
  • Add powered sugar, 1 cup at a time, stirring until well blended after each addition. Press into foil lined 8 inch square pan.
  • Microwave remaining 4 chocolate squares and 2 TBSP butter in large microwaveable bowl on High 1 1/2 minutes or until butter is melted. Stir until chocolate is completely melted. Spread over pudding mixture. Refrigerate 2 hours or until firm.
  • Store cut-up fudge between sheets of wax paper in airtight container in refrigerator up to 2 weeks.
  • Yields 24 servings, 2 inch squares each.

Tips:

  • Select Good Quality Ingredients: Use high-quality chocolate pudding mix, Jell-O, and gelatin for the best results.
  • Proper Measurements: Ensure accurate measurements of all ingredients, especially the gelatin, to achieve the right consistency.
  • Blooming Gelatin: When using unflavored gelatin, bloom it properly in cold water before adding it to the hot mixture. This helps prevent lumps.
  • Whisking and Stirring: Whisk the chocolate pudding mix with milk until smooth, and stir the Jell-O mixture thoroughly to dissolve the gelatin completely.
  • Chilling Time: Allow the chocolate pudding to chill for at least 30 minutes before adding the Jell-O mixture. This helps prevent the Jell-O from curdling.
  • Layering Technique: Pour the Jell-O mixture carefully over the chilled chocolate pudding, tilting the dish to create a smooth, even layer.
  • Refrigeration: Refrigerate the Jell-O chocolate pudding for at least 4 hours, or overnight, to allow it to set properly.

Conclusion:

The combination of rich chocolate pudding and refreshing Jell-O creates a delightful dessert that's perfect for any occasion. With its creamy texture and vibrant colors, this Jell-O chocolate pudding is sure to impress your family and friends.
