- Prepare the first three Jell-O packages (orange, cherry and lime) using one cup of boiling water and 1/2 cup of cold water for each flavors. Pour each mixture into separate 8-inch square glass pans. Chill overnight until the they are firmed. Combine the lemon Jell-O package, granulated sugar and one cup of boiling water. Stir until the Jell-O and sugar dissolve. Stir in pineapple juice. Chill until it is slightly solidified but not firm. Cut the firm Jell-O into 1/2 inch cubes. Follow the directions in the package to prepare the Dream Whip. Mix the Dream Whip with the lemon Jell-O done previously. Gently fold in the three colors of Jell-O cubes. - Lightly spray bundt pan with cooking spray, wipe out excess. Place 3/4 cup water in saucepan sprinkle one teaspoon unflavored gelatin over it, let sit for a minute or two. Heat on medium-low stirring constantly with whisk until dissolved, about 5 minutes. Add first package jell-o, whisk in until thoroughly dissolved, about 2 minutes. Remove from heat. If it's not set enough the layers will "bleed" through, if it sits too long the layers will come apart. - 1. Preheat oven as directed on cake mix box. Follow directions for making a 9X13 cake including all ingredients called for on the box. Bake cake as instructed.
- 2. About 5 minutes before the cake is done, in a small bowl, mix jello powder and 1 1/4 cup hot water. Stir until dissolved. NOTE: You do not use the amount of water called for to make regular jello.
- 3. When cake is done, let it cool 5 minutes. Poke the cake with a fork or a kebab pole all over the top of the cake going down to the bottom of the pan. Make sure you get the edges and corners.
- 4. Using a tablespoon, slowly drip the dissolved hot jello over the cake, taking care to get all of the holes. Cool cale completely and put in refrigerator to continue to cool and set- about 4 hours.
- 5. I use this frosting on my poke cakes. I sometimes match the flavor but you can mix it up to make it match holiday colors, shower color or birthday party colors. Place cooled cake layers, top-sides up, in clean 8 or 9-inch round pans; pierce with large fork at 1/2-inch intervals. In separate bowls, add 1 cup boiling water to each flavor dry gelatin mix. Stir 2 minutes or until completely dissolved. Slowly pour 3/4 of the red gelatin mixture over 1 cake round and 3/4 of the lime gelatin over second cake layer. When pouring the Jell-O over the cake layers it will look like the whole cake is saturated with color, but the gelatin mixture will only enter the holes that you made with the fork. - Make all of the Jello, except the lemon or strawberry, using 1 cup of hot water - 1/2 cup of cold water for each package. Pour each flavor into an ice cube tray to cube and place in the refrigerator to set. Use 2 packages of lady fingers to line the sides and bottom of spring form pan. Empty package of strawberry Jello into a pan with 1 cup pineapple juice and 1/2 cup of water. Bring to a boil and pour into a bowl and place in refrigerator until almost set. Whip 2 cartons of heavy cream. Fold into strawberry Jello. Cube all of the remaining Jello into small squares and add to the strawberry Jello. Pour 3/4 of cubes into spring pan lined with lady fingers. Place the rest of the cubes on top.
STRAWBERRY JELLO POUND CAKE
This is a variation of a Lemon Jello Pound Cake I found on another recipe site. I'm experimenting with cake decorating/sculpting, and it carves rather nicely. It called for lemon jello instead of strawberry, lemon extract instead of vanilla, and apricot nectar instead of orange juice. I will continue to experiment with different flavors of jello, extracts, and juices. I would like to encourage you to do the same and post your variations in your reviews. NOTE: For my purposes, I used cupcake tins for my layers, so I've set the servings accordingly. UPDATE: Originally, I posted this with orange juice instead of strawberry-banana nectar, so the first 2 reviews reflect that. I have since tried strawberry-banana nectar, and I like it much better for the strawberry flavor. If you want to try what's been reviewed or can't find the nectar, try the OJ. It's just got a little bite to it where the nectar is a more mellow flavor.

- Crust: Cream together butter and brown sugar until smooth. Add flour and nuts to the mix. Press dough into buttered 9 x 13 inch pan. I use the Pyrex pan. Bake crust for 10-15 minutes in preheated 375 degrees oven or until crust is brown. Let cool. Cream layer: Dissolve lemon Jello with 1 cup boiling water. Let this mixture cool. In a large bowl, cream together sugar and cream cheese. In a separate bowl, whip the heavy cream to stiff peaks (but don't make butter). Fold the whipped cream into the cream cheese mixture. Don't worry about it blending perfectly. Add the cooled lemon Jello and hand whisk together. Pour cream mixture over cooled crust and chill until firm in the refrigerator. Jello layer: In a large bowl, dissolve lime Jello with 2 cups boiling water. Add 1 cup cold water. Let this mixture cool. Pour on top of cheese mixture and return to refrigerator to cool completely. Cut and enjoy! Notes: You can, of course, change the color to suit your mood or holiday. This makes a bunch and can get pretty tall! When you add the cream layer, make sure you leave space for the top Jello layer. I usually place the 9x13 pan on a half-sheet pan in case I have spillage when placing the top layer on the cake!

- 1. Mix the Pkg. cake mix according to the box directions but cook it in a Bundt pan. 350° for 38-43 minutes. Cool.
- 2. To make the Jello Shots mix the package of Jello with boiling water until all the Jello is dissolved ; add liquor of your choice.( I like vodka or rum )
- 3. Remove the cake from the pan ; Wash and dry the pan and spray with veg. spray so the cake won't stick to the Bundt pan ; Put the cake back in the pan.
- 4. Poke holes in a zig zag pattern around the cake , about 1" apart with the handle of a wooden spoon and Carefully pour the Jello in the holes.

- 1. Grease bottom and sides of one nine inch round cake pan. Coat with flour.
- 2. Prepare the cake according to box directions. Pour cake into the ONE nine inch pan. To make two smaller cakes you can divide batter between two eight inch pans. Adjust cooking time accordingly.
- 3. Bake at 325 degrees for 40 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes before removing from pan. Cool completely before frosting and decorating.
- 4. Frosting In a bowl, combine all frosting ingredients (butter must be soft). Beat with an electric mixer until smooth and spreading consistency.
- 5. Cake assembly: Cut cake in half.
- 6. Frost the bottom sides and form the body of the bunny. Cut an area for the ears. Use a portion for the tail.
- 7. Frost the entire cake then sprinkle with 1/2 pound of coconut. Add ears, eyes, and whiskers. My mom used licorice for the whiskers and jelly beans for eyes and nose.
- 8. Mix the leftover half pound of coconut with green food coloring to make the grass. The jello eggs were made according to jello package directions and molded in plastic easter eggs.
