CRUSTLESS BROCCOLI QUICHE
Omitting the crust in this crustless broccoli quiche cuts down on prep time, cook time, and carbs -- and the cheesy custard is the best part anyway.

Steps:
- Preheat the oven to 325°F degrees and set an oven rack in the middle position. Grease a 9-inch deep dish pie plate with butter.
- Melt the butter in a large sauté pan over medium-low heat. Add the shallots and cook, stirring occasionally, until soft and translucent, about 4 minutes. Do not brown. Add the broccoli, ¼ teaspoon of the salt, and ⅓ cup water. Increase the heat to medium and cook, stirring occasionally, until the broccoli is al dente and the water has evaporated, 3-4 minutes more. Set aside.
- In a large bowl, whisk the eggs with the cream, nutmeg, remaining ¾ teaspoon salt, and cayenne pepper.
- Spread the broccoli and shallots evenly over the bottom of the prepared pie plate. Sprinkle the Gruyère over top. Pour the egg mixture over the cheese.
- Bake for about an hour, or until the custard is set and the top is golden brown. Let cool for about 10 minutes, then slice into wedges and serve.
- Make Ahead: This quiche can be made a day ahead of time and refrigerated. To warm up individual slices, simply reheat in the microwave for about a minute. To reheat the entire quiche, cover with aluminum foil and bake in a preheated 300°F oven until hot in the center, about 30 minutes.
- Freezer-Friendly Instructions: The cooled quiche may also be wrapped tightly in foil and frozen for up to 3 months. Remove the quiche from the freezer about 24 hours prior to eating and reheat it, covered with foil, in a 300°F oven until hot in the center.

JEAN'S CRUSTLESS SALMON BROCCOLI QUICHE
This recipe comes from my mom-in-law's neighbor, Jean. I think it may fall into the "impossible pie" category. The original recipe called for Bisquick but I used The Master Mix (recipe #45055). Serve with a green salad for brunch, lunch or supper. Leftovers keep well in the fridge for several days.

BROCCOLI SALMON QUICHE
I made this recipe up, because we eat a lot of salmon during the year. I also have a garden during the summer. My family likes this and it use up the leftover salmon. You can freeze this.

Yield 1 9 inch pie dish, 4-6 serving(s)
Number Of Ingredients 9
Steps:
- Butter a 9 inch pie plate.
- Toss the salmon and cheese with the flour, and place in the bottom of the buttered pan.
- In a medium bowl, whisk together eggs, heavy cream, salt, and pepper.
- Pour egg mixture over the cheese and salmon.
- Bake at 350 degrees for 30 to 35 minutes or until a knife comes out clean.
- Serve hot, top each piece with a dollop of sour cream and sliced green onions.
- Note: I use leftover salmon to make this, and I usually bake my salmon with spices, including plenty of garlic--you may want to add a little garlic to this recipe if you didn't cook your salmon this way.
- Lower Carb/Gluten Free Version: You can omit the flour if you choose to, I think it makes the whole recipe a bit wetter that way, though--for my picky kids' sake, I like to make it a little drier. We call it "salmon pie" and even the kids who "hate" eggs eat this one. :).
Tips:
- For a crispy crust, pre-bake the quiche crust for 10-15 minutes before filling it.
- Use a variety of vegetables in your quiche, such as broccoli, spinach, mushrooms, or zucchini.
- Add some cheese to the quiche filling for a richer flavor. Cheddar, Parmesan, and Gruyère are all good choices.
- Season the quiche filling with salt, pepper, and your favorite herbs and spices.
- Bake the quiche until the center is set and the top is golden brown.
- Let the quiche cool for 10-15 minutes before slicing and serving.
Conclusion:
Crustless salmon broccoli quiche is a delicious and easy-to-make meal that is perfect for breakfast, lunch, or dinner. It is packed with protein, vegetables, and healthy fats, and can be customized to your liking. With a few simple tips, you can make a perfect quiche every time.
