JARJEER (ARUGULA) SALAD

Jarjeer (Arugula) Salad image

A traditional Middle Eastern salad served all the way to Sudan. It's simple and DH likes it a lot since he likes mushrooms. Modified from a recipe found on allrecipes.com posted by IMANKAY. Note: Sumac is available as a ground spice in Middle Eastern markets, it comes from the dried berries of a shrub that grows wild in Mediterranean. The taste is sour, fruity and astringent.

Time 15m

Yield 4 , 4 serving(s)

Number Of Ingredients 8

1 (5 ounce) box baby arugula
2 sweet white onions, thinly sliced
1 cup chopped mushroom
1 tomatoes, diced (optional, I don't add this)
1 teaspoon unrefined extra virgin olive oil
1/2 lemon, juiced
2 teaspoons sumac (May be found in Middle Eastern stores, the Sudanese version would not use this but maybe extra lemon)
sea salt

Steps:

  • Wash and dry arugula.
  • Arrange leaves on a large plate and layer with onions, mushrooms and tomato if using.
  • Whisk together olive oil, lemon juice and sumac. Season to taste with sea salt, and pour over the salad.

Tips:

  • Select fresh arugula: Choose arugula that is vibrantly green, crisp, and has no signs of wilting or yellowing.
  • Wash arugula thoroughly: Rinse the arugula under cold water to remove any dirt or debris. Gently pat dry with a clean kitchen towel or salad spinner.
  • Use a variety of ingredients: Experiment with different ingredients to create a well-rounded salad. Consider adding crunchy nuts, tangy fruits, creamy cheese, or flavorful herbs.
  • Make a flavorful dressing: Use a simple vinaigrette or a more complex dressing to enhance the flavor of the salad. Experiment with different types of oils, vinegars, and seasonings.
  • Don't overcrowd the salad: When assembling the salad, avoid overcrowding the bowl. This will help ensure that the dressing evenly coats all the ingredients.
  • Serve immediately: Arugula salad is best enjoyed fresh. Serve immediately after assembling to prevent the arugula from wilting.

Conclusion:

Arugula salad is a versatile and delicious salad that can be enjoyed as a light lunch, a refreshing side dish, or a healthy snack. With its peppery flavor and nutritious profile, arugula makes a great addition to any meal. By following these tips, you can create a flavorful and satisfying arugula salad that will impress your taste buds and nourish your body.
