JAPANESE RISOTTO WITH MUSHROOMS AND SCALLIONS

Japanese Risotto with Mushrooms and Scallions image

As with any risotto, this dish should be served hot. Japanese rice absorbs sake and chicken stock, achieving the creamy, smooth texture of perfectrisotto. Garnish with enoki mushrooms, chopped scallions, and Kaiware sprouts. If you use the miso broth, a savory (not sweet) version is recommended for this recipe.

Yield 4 servings

Number Of Ingredients 16

1 lb. mixed wild, shiitake, and/or crimini mushrooms, broken into pieces or sliced 1/4" thick (about 4 cups)
3 garlic cloves, peeled, thinly sliced
6 thyme sprigs
1/4 tsp. crushed red pepper flakes
1/4 cup plus 2 Tbsp. extra-virgin olive oil, plus more for drizzling
1 3/4 tsp. (or more) kosher salt, divided
1 medium onion, finely chopped
1 cup arborio rice
1/2 tsp. freshly ground black pepper
1/2 cup dry vermouth or white wine
3 cups homemade chicken stock or low-sodium chicken broth, divided
2 oz. finely grated Parmesan (about 1 cup)
2 Tbsp. cold unsalted butter, cut into pieces
1/2 tsp. finely grated lemon zest
1/3 cup coarsely chopped parsley leaves
Lemon wedges (for serving)

Steps:

  • Place racks in bottom third and middle of oven; preheat to 350°F. Toss mushrooms, garlic, thyme, red pepper flakes, 1/4 cup oil, and 1/2 tsp. salt on a rimmed baking sheet. Roast on bottom rack, tossing halfway through, until deeply golden brown and crisped, 25-30 minutes.
  • Meanwhile, heat 2 Tbsp. oil in a large ovenproof Dutch oven or heavy pot over medium-high. Add onion and cook, stirring often, until softened and slightly translucent, 3-5 minutes. Stir in rice; season with pepper and 1/2 tsp. salt. Cook, stirring occasionally, until some grains are translucent, about 2 minutes. Add vermouth, bring to a simmer, and cook, stirring occasionally, until pan is almost dry, about 2 minutes. Add 2 1/2 cups stock. Bring to a simmer, then cover and bake in oven until liquid is mostly absorbed but rice is still slightly firm in the center, 16-18 minutes.
  • Return pot to stove and heat over medium. Add remaining 1/2 cup stock and cook, stirring constantly, until rice is tender but still has some bite and sauce is creamy, about 2 minutes. Remove from heat and stir in Parmesan, butter, and lemon zest; season to taste with salt, if needed. Add a little bit of warm water, if needed, until risotto is thick but still pourable.
  • Transfer risotto to a platter. Top with crispy mushrooms and parsley. Drizzle with oil. Serve with lemon wedges alongside.

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 16

4 cups low-sodium chicken broth
1 stalk lemongrass, smashed with the back of a knife
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter, room temperature
1 pound mixed mushrooms (shiitake, hon shemeji or maitake), torn or cut into similar sizes
2 cups thinly sliced Tokyo negi (approximately 1 bunch) or leeks or scallions
2 cloves garlic, chopped
1 tablespoon finely grated ginger
2 fresh green Thai chiles, chopped fine
1/2 teaspoon kosher salt
1 cup Arborio rice
1 cup dry white wine, such as pinot grigio
1/4 teaspoon toasted sesame oil
1 cup freshly grated Parmigiano Reggiano, plus more for garnish
1/4 cup fresh basil leaves, roughly chopped
1/4 cup pickled ginger

Steps:

  • Bring the chicken broth and lemongrass to a simmer in a medium saucepan over medium-high heat. Reduce the heat to low and keep warm.
  • In a straight-sided medium skillet, warm the olive oil and butter over medium-high heat. When the butter has melted and stopped bubbling, add the mushrooms and cook, stirring often with a wooden spoon, until the mushroom are beginning to brown, about 6 minutes. Reduce the heat to medium and add the Tokyo negi, garlic, ginger, Thai chiles and salt. Cook an additional 3 minutes, or until the negi has softened and the mixture is fragrant.
  • Add the rice to the pan; mix well to coat the grains in the flavorful oil. Deglaze the pan with the white wine, scraping up any brown bits that have formed in the pan. Simmer until the wine has almost completely evaporated, about 3 minutes. Add 1 cup of the simmering broth and cook, stirring, until almost completely absorbed, about 4 minutes. Add 3/4 cup broth and once again cook until evaporated, stirring constantly. Continue in this manner, adding 3/4 cup broth at a time, until the rice is tender, but still with some bite, and the mixture is creamy, about 20 minutes total.
  • Remove from the heat and stir in the sesame oil and Parmesan. Serve garnished with Parmesan, basil and pickled ginger.

Time 40m

Yield 6 first-course servings

Number Of Ingredients 8

6 cups homemade chicken broth (or use 4 cups canned with 2 cups water)
6 tablespoons unsalted butter
1 1/4 cup chopped scallions (use the lower white and light green parts)
1 1/2 cups Arborio rice
1/2 cup dry white wine
1/3 cup chopped scallions (use the green tops)
1/2 cup grated Parmesan or grana cheese
White pepper to taste

Steps:

  • In a large saucepan, bring the broth to a boil; lower the heat and keep at a scant simmer.
  • Meanwhile, in a large saute pan (see note) heat 4 tablespoons of the butter and cook the white parts of the scallions, stirring until they're soft, about 2 minutes. Add the rice, stirring with a wooden spoon, until all the grains are coated with butter. Add the wine and cook the mixture at a low simmer, stirring until all the wine is absorbed, about 3 to 4 minutes.
  • Add 1/2 cup of the simmering broth and continue to simmer the mixture, stirring until the broth is absorbed. Keep adding broth by the 1/2 cup and repeating as above until the rice is creamy and al dente The rice may not absorb all the broth, so it's best to taste the mixture before adding the last 1/2 cup.
  • Remove the pan from the heat and stir in the remaining 2 tablespoons butter, the green scallion tops, cheese and white pepper.

Tips:

  • Choose high-quality ingredients. This means using Arborio rice, which is a short-grain rice that is specifically designed for risotto. You should also use fresh mushrooms and scallions, and a good quality Parmesan cheese.
  • Toast the rice before adding the liquid. This will help to develop the flavor of the rice and prevent it from becoming mushy.
  • Add the liquid in small increments. This will help to control the cooking process and prevent the rice from becoming too soupy.
  • Stir the risotto constantly. This will help to prevent the rice from sticking to the bottom of the pan and burning.
  • Cook the risotto until it is al dente. This means that the rice should be tender but still have a slight bite to it.
  • Finish the risotto with butter and Parmesan cheese. This will help to add richness and flavor to the dish.

Conclusion:

Japanese risotto with mushrooms and scallions is a delicious and easy-to-make dish that is perfect for a weeknight meal.
