1 large carrot ((rough chopped))
1-2 ribs celery ((rough chopped))
1/2 white onion ((rough chopped))
1/2 Tbsp garlic ((2 crushed cloves, or minced garlic))
4 cups chicken broth
2 cups water
1 Tbsp soy sauce
6 mushrooms ((washed and thinly sliced))
4 green onions ((sliced, green portion only))
1/4 cup fried onions
each, salt & pepper ((to taste))

Steps:

  • In a saucepan, combine the vegetable base for the broth: carrots, celery, onion, and garlic with a tablespoon or two of water or chicken broth. Saute the vegetables over medium-high heat until fragrant.

½ stalk celery, chopped
1 small onion, chopped
½ carrot, chopped
1 teaspoon grated fresh ginger root
¼ teaspoon minced fresh garlic
2 tablespoons chicken stock
3 teaspoons beef bouillon granules
1 cup chopped fresh shiitake mushrooms
2 quarts water
1 cup baby portobello mushrooms, sliced
1 tablespoon minced fresh chives

Steps:

  • In a large saucepan or stockpot, combine the celery, onion, carrot, ginger, garlic, and a few of the mushrooms. Add chicken stock, beef bouillon, and water. Place the pot over high heat, and bring to a rolling boil. When the mixture reaches boiling, cover, reduce heat to medium, and cook for 45 minutes.
  • Place all of the remaining mushrooms into a separate pot. When the boiling mixture is done, place a strainer over the pot with the mushrooms in it. Strain the cooked soup into the pot with the mushrooms. Discard strained materials.
  • Serve the broth with mushrooms in small porcelain bowls, and sprinkle fresh chives over the top. Use Asian soup spoons for an elegant effect.

2 Tbsp oil
2 medium onions diced
2 stalk(s) celery diced
2 large carrots diced
6 clove garlic rough chop
8 c chicken, or vegetable stock or just water
2 tsp salt
4 oz button mushrooms sliced paper thin
3 green onions chopped
1 Tbsp soy sauce
sriracha sauce for serving

Steps:

  • 1. Place the oil in a large pot. Saute the onion until browned. Add the stock or water, celery, carrots, garlic and salt. Bring to a boil and reduce the heat and simmer for 30 to 45 minutes. Strain the broth and discard the solids.
  • 2. Place the broth back on the stove and add the mushrooms and green onions. Add the soy sauce taste and adjust for salt.
  • 3. Serve with a squirt of Sriracha.

1 large carrot
1 medium onion, chopped
2 garlic cloves, crushed
1 green onion, thinly sliced
