1 cup rinsed and drained canned black beans
3/4 cup finely chopped red onion
1/4 cup fresh cilantro, chopped
3/4 teaspoon salt, divided
1 teaspoon ground allspice
1 teaspoon ground cumin
1/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1/8 teaspoon cinnamon
4 salmon fillets (5 ounces each), skin on
1 teaspoon olive oil

Steps:

  • Combine mangoes, pineapple, black beans, onion, cilantro and 1/4 teaspoon salt in a bowl. Combine remaining 1/2 teaspoon salt, allspice, cumin, thyme, cayenne and cinnamon in another bowl; rub over both sides of each fillet. 1 garlic clove, minced

SALSA:
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 tablespoon sugar
1 tablespoon minced fresh mint or 1 teaspoon dried mint
1 tablespoon chopped red onion
2 teaspoons minced jalapeno pepper
4 thin orange slices

  • In a large resealable plastic bag, combine the orange juice, soy sauce, garlic, ginger and pepper; add salmon. 1 teaspoon garlic granules

¼ cup extra virgin olive oil
2 tablespoons soy sauce
3 tablespoons shallots, chopped

½ cup diced pineapple
2 large plum tomatoes, diced

4 (6 ounce) fillets salmon
½ cup chicken broth

6 (6 ounce) salmon fillets
2 teaspoons olive oil, plus
1 tablespoon olive oil, divided
4 tablespoons lemon juice, divided
4 teaspoons minced fresh ginger, divided
1 medium red bell peppers or 1 medium yellow bell pepper, diced
1 small red onion, finely chopped
2 (8 ounce) cans crushed pineapple
1/2 cup golden raisin
1/4 teaspoon cayenne pepper
3 cups torn fresh spinach
3 cups torn fresh romaine lettuce
