1 handful chopped fresh parsley
2 tablespoons low-salt soy sauce

  • One of the things I love to do is to stir-fry the corn kernels in a hot wok or frying pan with 2 tablespoons of olive oil, a tablespoon of chopped ginger, a teaspoon of chopped chilli, a handful of chopped fresh parsley and a couple of tablespoons of low-salt soy sauce. You can vary the flavours with different herbs, but this is a good base to start with.

These fried sweetcorn fritters are an excellent accompaniment to some crispy bacon, and make a tasty vegetarian brunch dish when served with guacamole.

Steps:

  • 1. Place the drained sweetcorn in a medium-sized bowl and mix with the spring onions, chilli, if using, and coriander. 2. Sift the flour and baking powder and 1 teaspoon salt into a separate bowl. 3. Whisk together the eggs and milk until well combined. 4. Make a well in the centre of the flour bowl. Gradually pour the egg mixture into the well, whisking continuously, until the batter is smooth. 5. Stir in the corn mixture, season with salt and pepper and rest for 10 minutes. 6. Pour the oil into a large deep frying pan making sure the base of the pan is well covered. (CAUTION: hot oil can be dangerous. Do not leave unattended.) Heat the oil, add a tiny bit of batter, and if it immediately starts sizzling the oil is hot enough. Using 2 tablespoons of mixture per fritter, drop the mixture carefully into the pan. You should be able to cook 2-3 fritters at a time. Fry for 2-4 minutes on one side until a light brown, then turn over and cook for a further minute. 7. Transfer to a plate lined with kitchen paper. Repeat until all the batter is used. Serve with fried bacon, guacamole and soured cream.

1 tablespoon lemon juice
6 ears corn on the cob, husks and silk removed

Steps:

  • Fill a large pot about 3/4 full of water and bring to a boil. Stir in sugar and lemon juice, dissolving the sugar. Gently place ears of corn into boiling water, cover the pot, turn off the heat, and let the corn cook in the hot water until tender, about 10 minutes.

198g can sweetcorn, drained
2 spring onions, finely chopped
50g courgette, grated
1 tsp smoked paprika
50g self-raising flour
5 eggs, 1 beaten, 4 for poaching
40ml milk
4 tbsp sweet chilli sauce
juice 1 lime
1 tbsp vegetable oil
mixed leaves, to serve

Steps:

  • Mix the sweetcorn, spring onions, courgette, paprika, flour, beaten egg, milk and some seasoning in a large bowl and set aside.
  • Put a large pan of water on to boil. In a bowl, mix the chilli sauce with the lime juice and set aside.
  • Heat the oil in a large, non-stick pan and spoon in four burger-sized mounds of the fritter mixture, spaced apart (you may need to do this in two batches). When brown on the underside, turn over and cook for 3 mins more until golden.
  • Meanwhile, poach the eggs in the simmering water for 2-3 mins until cooked and the yolks are runny. Remove with a slotted spoon. Serve the fritters topped with a poached egg, mixed leaves and a drizzle of the chilli dressing.
