TAGLIERINI WITH A SIMPLE SWEET TOMATO SAUCE AND SHRIMPS

Taglierini with a simple sweet tomato sauce and shrimps image

This lovely combo of sweet tomato, cream and prawns works a treat with tagliatelle pasta too

Provided by Jamie Oliver

Categories     Mains     Jamie's Kitchen     Italian     Tomato     Seafood     Pasta & risotto

Time 30m

Yield 4

Number Of Ingredients 11

8 plum tomatoes
sea salt
freshly ground black pepper
extra virgin olive oil
300 g small peeled prawns or shrimps, from sustainable sources, ask your fishmonger
1 clove garlic, peeled and finely chopped
1 lemon, zest and juice of
2 shots Vecchia Romana or Cognac
142 ml single cream
400 g fresh or dried taglierini
1 large handful fresh parsley, roughly chopped

Steps:

  • Taglierini is a similar shape to fettuccine or egg noodles and lends itself well to creamy, buttery or light tomato-based sauces and especially little seafood numbers like this one. Feel free to use tagliatelle as well.
  • Blanch and skin the tomatoes, then halve them and chop into small pieces.
  • Put a pan of salted water on to heat for the pasta. Put a couple of lugs of olive oil in a second pan, and fry the prawns, garlic, lemon zest and tomatoes for a couple of minutes. Add the booze and allow to flame if you like. (The flame should go out after about 30 seconds, so don't worry!) Add the cream, allow to simmer gently for a couple more minutes and then remove the pan from the heat. Season the sauce carefully with salt, pepper and the lemon juice.
  • Put the pasta into the boiling water - fresh will need only 3 minutes and dried will need to be cooked according to the packet instructions. If your sauce has cooled down then reheat it now. When the pasta is cooked, drain it in a colander and then toss with the parsley in the pan in which it was cooked. Check the seasoning, then divide on to your serving plates with the sauce on top. Serve straight away, telling your guests to stir the pasta up in their bowls every so often to keep the pasta moist.
  • Try this: Crumble over a little ricotta or feta cheese - just a little bit - both of these cheeses have a nice texture, go really well with prawns and make it look great.
  • And this: A handful of spinach added at the end gives a nice vibe - the heat will wilt it into the sauce.
  • Or this: You can use tinned tomatoes for this dish but you won't get the freshness or lightness that you get from fresh tomatoes.

CREAMY PRAWN LINGUINE

Creamy prawn linguine image

Elegant, delicious and on the table in just 15 minutes - this prawn pasta hits the spot and feels a bit posh, too. By finely chopping most of the prawns, they'll stick beautifully to the linguine, in turn creating sweetness and texture.

Time 15m

Yield 2

Number Of Ingredients 9

150 g dried linguine
2 cloves of garlic
160 g raw peeled king prawns, from sustainable sources
4 rashers of higher-welfare smoked pancetta
olive oil
50 ml Italian red wine
1 heaped tablespoon mascarpone cheese
50 g rocket
10 g Parmesan cheese

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions. Meanwhile, peel and finely slice the garlic. Run your knife down the back of 2 prawns, so they'll butterfly as they cook, then finely chop the rest.
  • Put a large non-stick frying pan on a medium heat. Finely slice the pancetta, sprinkle into the pan with 1 tablespoon of olive oil and fry until lightly golden. Toss in the garlic and whole prawns for 2 minutes, then go in with the wine and let it cook away. Toss through the chopped prawns and mascarpone for 1 minute, then use tongs to drag the pasta straight into the pan, letting a little starchy cooking water go with it. Roughly chop the rocket, add most of it to the pan and toss it all together over the heat until you have a silky sauce. Subtly season to perfection with the Parmesan and black pepper. Serve sprinkled with the remaining rocket and an extra grating of Parmesan, if you like.

PRAWN AND TUNA LINGUINE

Prawn and Tuna Linguine image

Inspired by my time cooking with Nonna Rosanna, this sweet and sour pasta is an absolute joy, and uses prawns and their heads for maximum flavour. I'm using her trick of washing sliced onions to make them milder, and that moisture also helps to add extra sweetness as they cook, before we add vinegar for contrast.

Provided by Jamie Oliver

Categories     main-dish

Time 45m

Yield 2 servings

Number Of Ingredients 12

2 small onions
4 large raw shell-on prawns, from sustainable sources
Olive oil
1 cinnamon stick
2 anchovy fillets in oil, from sustainable sources
1 good pinch of saffron
4 tablespoons white wine vinegar
50 grams (2 ounces) shelled unsalted pistachios
Pecorino or Parmesan cheese rind
150 grams (5 ounces) dried linguine
200 grams (7 ounces) yellowfin tuna, from sustainable sources
1/2 a bunch of fresh flat-leaf parsley (15 grams [0.5 ounce])

Steps:

  • Peel and finely slice the onions and place them in a bowl of water. Pull off the prawn heads and put just the heads into a cold frying pan with 2 tablespoons of oil and the cinnamon. Place on medium heat and, once sizzling, add the anchovies. Drain the onions and toss into the pan. Cover and cook for 20 minutes, or until super-soft, stirring occasionally and adding a splash of water, if needed. Meanwhile, peel the prawns, run a small sharp knife down the back of each to butterfly them, then pull out and discard the vein. Steep the saffron in a splash of boiling water and the vinegar. Pound the pistachios in a pestle and mortar. And, for another Rosanna trick, finely grate a little pecorino rind, for seasoning.
  • Cook the pasta in a pan of boiling salted water according to the packet instructions. Meanwhile, chop the tuna into erratic 1-centimeter (3/8-inch) chunks, and finely chop the top, leafy half of the parsley. With 2 minutes to go on the pasta, remove the lid from the onions and turn the heat to high. Gently squash each prawn head so all the tasty juices spill out into the pan, then discard the heads and the cinnamon. Stir in half the parsley, then break the frying by adding the saffron vinegar mixture. Stir in the prawns and tuna, then use tongs to drag the pasta straight into the pan, letting a little starchy cooking water go with it. Toss over the heat for 2 minutes, loosening with a little extra cooking water, if needed. Turn the heat off, quickly toss in the grated pecorino rind and the pistachios, taste and check the seasoning, then sprinkle over the remaining parsley.

ASPARAGUS LINGUINE

Asparagus Linguine image

I learnt this technique for cooking asparagus from one of the nonnas I met at the market in Rome. By frying, then adding a little liquid and reducing to a low temperature, you ensure the flavours combine beautifully. Creating emulsification at the very end gives a perfect sauce that's as much about flavour as it is texture.

Provided by Jamie Oliver

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 8

300 grams (10 ounces) dried linguine
300 grams (10 ounces) mixed asparagus (wild, white, regular)
4 cloves of garlic
2 dried red chillies
Olive oil
1 knob of unsalted butter
30 grams (1 ounce) pecorino or Parmesan cheese, plus extra to serve
1 lemon

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions. Meanwhile, snap off and discard the woody ends of the asparagus, then finely slice the spears at an angle, leaving the tips whole. Peel and finely slice the garlic, crumble up the dried chillies, and place both in a large frying pan on a medium heat with 2 tablespoons of oil and the butter. When the garlic starts to sizzle, stir in the asparagus. Let it start to fry, then add a spoonful of pasta water, cover, and leave to simmer on a low heat until the pasta is al dente.
  • Using tongs, drag the pasta straight into the asparagus pan, letting a little starchy cooking water go with it. Turn the heat off, then finely grate in the pecorino and toss together until the fat, cheese and liquid make a natural creamy sauce--loosen with a little extra cooking water, if needed. Taste and season to perfection, then divide between your plates. Finish with a grating of pecorino and a little lemon zest, to taste.

Tips:

  • Use fresh, succulent shrimp: The quality of your shrimp will make a big impact on the final dish, so be sure to choose the best you can find. Look for shrimp that are firm, plump, and have a slightly translucent appearance.
  • Cook the shrimp properly: Overcooked shrimp are tough and rubbery, so be careful not to overcook them. Cook the shrimp until they are just opaque and pink in the center, about 2-3 minutes per side.
  • Use a good quality pasta: The pasta is the foundation of this dish, so it's important to use a good quality pasta that will hold its shape and not become mushy. Look for a pasta that is made with durum wheat and has a slightly rough texture.
  • Don't overcrowd the pan: When cooking the shrimp and pasta, be sure not to overcrowd the pan. If you overcrowd the pan, the shrimp and pasta will not cook evenly and will end up mushy.
  • Use a flavorful sauce: The sauce is what really brings this dish together, so be sure to use a flavorful sauce that you enjoy. The recipe in the article uses a creamy tomato sauce, but you can use any sauce that you like.

Conclusion:

Jamie Oliver's Creamy Shrimp Linguine is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The combination of succulent shrimp, creamy tomato sauce, and al dente pasta is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
