1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 lb. (about 2/3 of 13-1/2-oz. pkg.) OSCAR MAYER Natural Uncured Turkey Sausage, sliced
1/2 cup chopped onions
1 tsp. salt-free Creole seasoning
1 tsp. minced garlic
1/2 tsp. black pepper
1 can (14-1/2 oz.) no-salt-added stewed tomatoes, undrained
1/4 cup butter
1 cup milk
1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Cook Macaroni as directed on package.
  • Meanwhile, heat oil in large skillet on medium heat. Add chicken, sausage, onions and seasonings; stir. Cook 5 min. or until chicken is no longer pink, stirring frequently. Add tomatoes; cook 5 min., stirring occasionally.
  • Drain macaroni. Add to chicken mixture along with the Cheese Sauce Mix and butter; cook and stir 1 min. or until butter is completely melted and mixture is well blended. Add milk and VELVEETA; stir. Cook 5 min. or until VELVEETA is completely melted, stirring frequently.

1/4 cup olive oil
1 pound medium shrimp, peeled and deveined
Creole seasoning, recipe follows
1 chicken, cut into 8 pieces
1 1/2 pounds andouille sausage, cut into 1/2-inch cubes
2 cups chopped onion
1 cup chopped celery
1 cup chopped bell pepper
2 tablespoons minced garlic
3 bay leaves
1/4 teaspoon cayenne pepper
1 1/2 tablespoons chopped thyme leaves
1 cup chopped tomatoes
6 cups water
2 cups rice
Salt and pepper
1 cup chopped green onions
1/2 cup chopped parsley
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large Dutch oven, heat 2 tablespoons of the olive oil over medium high heat. Season shrimp with Creole seasoning and saute until almost cooked through, about 4 minutes. Using a slotted spoon, remove shrimp and set aside until later. Season chicken pieces with Creole seasoning. Add remaining olive oil to Dutch oven and when hot, add chicken pieces and saute until browned on both sides, about 8 minutes. Remove and set aside. Add sausage and cook until browned. Add onion, celery, bell pepper, garlic, bay leaves, cayenne and thyme and cook until vegetables are wilted, about 6 minutes. Add tomatoes and water and return chicken pieces to pot. Season with salt and pepper and simmer, covered, for 20 minutes. Add rice to pot, stir well and return to a boil. Reduce heat to low, cover pot, and cook for 15 minutes. Add shrimp, green onions and parsley to Dutch oven, mixing carefully, and continue to cook, covered, for another 10 minutes. Remove from heat and let sit 10 minutes before serving.
  • Combine all ingredients thoroughly.

I have made this recipe over and over and it has been a huge success every time. I tweaked this recipe over time to fit my own personal tastes and I hope your family will like it too. Don't be afraid of the long instructions, they take you through this quick dish step by step.

2 garlic cloves, minced
2 teaspoons vegetable oil
1 1/2 cups chopped green bell peppers
1 cup chopped white onion
2 cups chopped mushrooms
2 cups sliced celery
2 cups chicken broth
1 (15 ounce) can diced tomatoes
1 lb smoked sausage, sliced
2 lbs chicken breasts
1 tablespoon cumin
2 tablespoons oregano
2 tablespoons thyme
1 -2 tablespoon Lawry's Seasoned Salt
1 teaspoon chili powder
1 dash red pepper flakes
1 dash cayenne
1 pinch cornstarch
1 1/2 cups shredded sharp cheddar cheese
salt and pepper
2 cups dry rice
4 cups water

Steps:

  • start cooking two cups of rice with 4 cups of water in a small pot over medium heat. For extra flavor cook with chicken broth instead.
  • preheat a large stock pot on medium heat with two teaspoons of vegetable oil.
  • Slice sausage and dice chicken into 1/2 inch size pieces.
  • Brown meat until it is golden brown.
  • Meanwhile, mince garlic. chop all the green pepper, onions, celery and mushrooms into 1/2 inch size pieces.
  • When meat is browned add in all the chopped vegetables and stir to combine.
  • Wait three minutes and pour can of diced tomatoes and juices over veggies. Add chicken broth and seasonings.
  • Stir to combine and let simmer on stove for 20 minutes checking occasionally until done.
  • Add cheese and pinch of corn starch and cook 10 more minutes.
  • Remove from heat and serve over rice and top with shredded chesse.
