JAMAICAN BROWN STEW FISH

Jamaican Brown Stew Fish image

There's a restaurant near here in South Florida that serves this dish, and they make it soooo good. It has a slightly sweet/tangy flavor that goes really well with the snapper. I decided to try making it myself, but after looking in Recipezaar, I couldn't find the sweet version. I finally found it somewhere else on the web and tweaked it to perfection. Serve with a little salad and rice and peas. For the rice and peas, I recommend recipe # 97745. Hope you like it.

Tips:

  • For a richer flavor, use a combination of vegetable oil and butter to sauté the aromatics and fish.
  • Do not overcrowd the pan when searing the fish. This will prevent it from cooking evenly.
  • Use a variety of bell peppers and onions for a more colorful and flavorful dish.
  • Adjust the amount of Scotch bonnet pepper to your desired level of heat.
  • If you don't have canned tomatoes, you can use fresh tomatoes. Just dice them and add them to the pot along with the other ingredients.
  • Serve Jamaican stewed fish with rice, boiled plantains, or your favorite side dish.
