2 Tbsp salt
1/2 tsp black pepper
10 whole allspice
1 lb large shrimp in shell (21-25 per lb.)

  • 1. Combine all ingredients except shrimp in a 4-quart heavy pot and bring to a boil, then reduce heat and simmer, covered, 20 minutes.

Tips:

  • Use fresh, succulent shrimp. This will ensure the best flavor and texture. If using frozen shrimp, thaw them completely before cooking.
  • Marinate the shrimp in a flavorful mixture before cooking. This will help to infuse the shrimp with flavor and prevent them from becoming dry.
  • Cook the shrimp over high heat. This will help to create a nice sear on the outside of the shrimp while keeping the inside juicy.
  • Don't overcook the shrimp. Shrimp cook quickly, so it's important to watch them closely to prevent them from becoming tough.
  • Serve the shrimp immediately. Jamaican pepper shrimp is best enjoyed fresh out of the pan.
