JERK SWEET POTATO FRIES

I saw this in the Salem Statesman Journal and wanted to keep it for later. It comes from chef Carl Conway. Looking forward to trying it this holiday season as a fun and different side dish! Please note that the 'jerk' seasoning amounts make 1.3 cups. YOU ONLY WANT TO USE 2 TABLESPOONS OF IT on each 1.5 lb. measure of potatoes.

Tips:

  • Choose the right sweet potatoes: Use firm and evenly-shaped sweet potatoes for best results.
  • Cut the fries evenly: This will help them cook evenly.
  • Soak the fries in cold water: This will help remove excess starch and make them crispier.
  • Dry the fries thoroughly: This will help them crisp up in the oven.
  • Season the fries generously: The jerk seasoning is what gives these fries their unique flavor, so don't be afraid to use plenty of it.
  • Bake the fries at a high temperature: This will help them get crispy on the outside and tender on the inside.
  • Serve the fries hot: They're best when they're fresh out of the oven.

Conclusion:
