JAMAICAN BEEF PATTIES

New Yorkers love their hand-helds. The folded pizza slice, the hot dog and the crusty knish have a built-in mobility that lets hungry New Yorkers eat on the street, and enough density to carry them through to the next meal. New immigrants have added to the on-the-go family, introducing Colombian arepas, Mexican tacos and Uzbek samsas. But the hand-held with the best shot at making the list of classic New York noshes is the Jamaican beef patty, a rectangle of flaky yellow crust filled with ground beef shot through with onion, thyme and the inimitable heat and perfume of Scotch bonnet chili peppers. The patties are familiar to New Yorkers who order bland commercial versions sold at numerous pizzerias. But they cannot compare to the fresh, handcrafted patties found at a handful of Jamaican bakeries here. The flakiest crusts are still made with a hefty percentage of beef suet, and the most memorable fillings are unabashedly hot. The Jamaican patty is served wrapped in coco bread, which is like an oversize, slightly sweet hamburger bun. It is called coco bread not because it contains coconut (it doesn't), but because you split it open like a coconut. Although the combination first appears dauntingly starchy, the soft sweetness of the bread nicely offsets the spicy filling and the crisp crust.

Time 1h30m

Yield 12 patties

Number Of Ingredients 18

4 cups all-purpose flour
2 teaspoons salt
2 teaspoons turmeric
1 teaspoon curry powder, preferably West Indian
1 ½ cups cold vegetable shortening or chopped beef suet (about 12 ounces)
2 tablespoons vegetable oil
5 scallions, finely chopped
1 medium onion, finely chopped
4 cloves garlic, finely chopped
1 Scotch bonnet chili pepper, seeded and finely chopped
½ teaspoon paprika
¼ teaspoon ground allspice
1 pound ground beef, about 80 percent lean
2 teaspoons thyme leaves
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon sugar
Coco bread, hamburger buns or soft potato buns, for serving (optional)

Steps:

  • Mix flour, salt, turmeric and curry powder in a large bowl. Add shortening or suet and use your fingertips to rub it together with flour. When shortening is in small pieces and covered with flour, pour in ½ cup ice water and mix with your hands. Keep adding ice water, a few tablespoons at a time, until mixture forms a dough. It may be slightly sticky. Knead dough for two minutes, form into two disks, wrap in plastic and refrigerate while you make filling.
  • Heat oil in a deep skillet over medium heat and add scallions, onion, garlic and half the chili pepper. Cook, stirring, until softened but not browned. Add paprika and allspice and stir to coat. Add beef and thyme and stir, breaking up any clumps. Add water just to cover meat. Mix in salt, pepper and sugar and bring to a simmer. Taste for seasonings, adding salt, pepper and chili pepper, if necessary; mixture should be quite spicy. Simmer about 30 minutes, until meat is soft and water is reduced to a sauce. Set aside to cool slightly.
  • Heat oven to 375 degrees. Remove one disk of dough from refrigerator and divide it in half. Roll out one half on a lightly floured surface until large enough to cut three circles, each about 6 inches across. (Use the rim of a bowl turned upside down as a guide.) Repeat with remaining dough, setting aside the circles. Use scraps to make additional small patties, if you like.
  • When ready to fill, have ready a fork for crimping and a bowl of water. Place two tablespoons of filling on lower half of one circle. Dip a finger into water and moisten the edge of the dough. Fold the top half over, pulling dough gently over filling and making a thick edge all around. Crimp edge with a fork and transfer to an ungreased baking sheet, preferably nonstick. Repeat with remaining dough and filling. Bake about 25 minutes, until top crust is firm and golden. Serve hot as is or inside buns.

JAMAICAN PATTIES; BEEF, CHICKEN, OR LAMB

Jamaican Patties; Beef, Chicken, or Lamb image

These are delicious curry-flavored pastries found in the Caribbean islands, particularly in Jamaica. Great as a snack or as a Jamaican meal compliment. I also enjoy them with a spinach, corn, and bean salad. I have used pre-packaged Crescent rolls (2 cylinders rolled out and cut into 10 circles or phyllo dough (15 sheets cut lengthwise to make 30 triangles) as a time saver. Not as good or as spicy as the handmade pastry, but sometimes there's just not enough time. Store in the fridge for up to 5 days an reheat in microwave on medium heat.

JAMAICAN BEEF PATTIES

Nicely spiced and not difficult to make. I use a little gadget for making perogies that cuts the circle, folds the pastry in half once the meat is in and crimps the edges (great investment of two bucks!). They turn out smaller, but are a good size for an appetizer. I serve these with a commercial Jerk barbecue sauce.

Time 1h30m

Yield 24 patties

Number Of Ingredients 18

4 cups flour
1/2 teaspoon baking powder
1 teaspoon ground turmeric
1 teaspoon curry powder
1 teaspoon salt
1 cup vegetable shortening
1 egg, beaten
3/4 cup water (or more)
2 medium onions, finely chopped
3 scallions, including tops finely chopped
2 hot peppers, finely chopped (preferably scotch bonnet)
1 1/2 lbs lean ground beef
2 tablespoons oil
5 cups fresh breadcrumbs
3/4 teaspoon ground thyme
3/4 teaspoon ground turmeric
salt and pepper
3/4-1 cup water

Steps:

  • Pastry: Sift together flour, baking powder, turmeric, curry and salt.
  • Cut in shortening with pastry blender or until pastry has consistency of corn meal. (I have used food processor and "pulsed" the mixture with good results) Add egg to water and mix well.
  • Add just enough of this mixture to flour mixture in order to hold dough together, mixing it in with your fingers.
  • Wrap dough in plastic wrap and refrigerate for 30 minutes.
  • Filling: Add chopped onions and peppers to ground beef and mix well with hands.
  • Heat oil in large frying pan or dutch oven.
  • Add meat mixture.
  • Cook until lightly browned, about 10 minutes.
  • Add breadcrumbs and seasonings and stir well.
  • Add water.
  • Cover and simmer for 30 minutes or as long as needed to evaporate the excess liquid (mixture should be just wet, not runny or not dry).
  • Allow meat mixture to cool while rolling pastry.
  • Divide the dough into 24 even-sized pieces.
  • On a lightly floured surface, roll out each piece of dough to a thickness of 3/8 of an inch and cut into 4 inch circle.
  • Keep patty dough circles moist by stacking and covering them with a damp cloth.
  • After all circles are cut, take one at a time and spoon on enough filling to cover half the circle.
  • Fold the other half over, and seal the edges by crimping with a fork.
  • Bake the patties on ungreased baking sheets and bake at 400°F for 30-35 minutes.
  • Serve hot.

  • Place the patties on a greased cookie sheet and bake 20-25 minutes.

Tips:

  • Choose the right beef. For the best patties, use a combination of ground chuck and ground sirloin. This will give you a patty that is juicy and flavorful.
  • Season the beef well. Don't be afraid to use plenty of Jamaican seasonings, such as allspice, thyme, and Scotch bonnet pepper. These flavors will really come through in the finished patty.
  • Chill the beef before cooking. This will help the patties hold their shape better when they are cooked.
  • Don't overcook the patties. Cook them just until they are cooked through, otherwise they will become dry and tough.
  • Serve the patties hot. Jamaican beef patties are best enjoyed hot off the grill, with your favorite dipping sauce.

Conclusion:

Jamaican beef patties are a delicious and easy-to-make snack or meal. They are perfect for parties, picnics, or just a quick lunch or dinner.
