Tips:

  • Use dried beans for a more authentic flavor and texture. If using canned beans, rinse and drain them well before cooking.
  • Soak the beans overnight or for at least 4 hours before cooking. This will help to reduce the cooking time and make the beans more digestible.
  • Use a heavy-bottomed pot or Dutch oven for cooking the beans and rice. This will help to evenly distribute the heat and prevent the beans from burning.
  • Add aromatics such as garlic, onion, and thyme to the pot along with the beans. This will help to infuse the beans with flavor.
  • Season the beans with salt and pepper to taste. You can also add other Jamaican spices such as allspice, cumin, and ginger.
  • Cook the beans until they are tender but still hold their shape. This usually takes about 1 hour for dried beans and 30 minutes for canned beans.
  • Once the beans are cooked, add the rice and cook according to the package directions. Be sure to use a ratio of 2 cups of liquid to 1 cup of rice.
  • Serve the beans and rice with your favorite Jamaican sides, such as fried plantains, coleslaw, or steamed vegetables.
