"LITTLE KICK" JALAPENO BURGERS

2 jalapeno peppers, seeded and finely chopped
2 tablespoons minced fresh cilantro
2 tablespoons light beer or water
2 dashes hot pepper sauce
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 pound extra-lean ground turkey
3 slices pepper jack cheese, cut in half
6 dinner rolls, split
6 tablespoons salsa
6 tablespoons fat-free sour cream
6 tablespoons shredded lettuce

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into six patties., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until a thermometer reads 165° and juices run clear. , Top with cheese; cover and grill 1-2 minutes longer or until cheese is melted. Serve on rolls with salsa, sour cream and lettuce.

2 pounds ground beef
4 slices Swiss cheese
1 small onion, finely chopped
2 to 3 pickled jalapeno peppers, seeded and finely chopped
4 hamburger buns, split and toasted
Lettuce leaves and ketchup, optional

Steps:

  • Shape beef into eight thin patties. Top four patties with cheese, onion and jalapenos. Top with remaining patties; press edges firmly to seal. , Grill, covered, over medium heat or broil 4 in. from the heat for 8-9 minutes on each side or until a thermometer reads 160° and juices run clear. 2 cups canned sliced jalapenos (with the juice)
1/2 cup sugar
1/4 cup orange marmalade
2 1/2 pounds ground turkey
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil
6 tablespoons unsalted butter
6 brioche buns
6 leaves green leaf lettuce
6 slices beefsteak tomato
6 slices red onion
12 slices Hass avocado

Steps:

  • For the jalapeno jam: In a small saucepot, combine the jalapenos, sugar and marmalade and bring to a simmer over low heat. Simmer until the liquid reduces to a glaze, about 1 hour.
  • For the turkey burgers: In a bowl, combine the ground turkey, salt and pepper and mix well. Form the mixture into 6 patties.
  • Heat a cast-iron skillet over high heat until it begins to smoke. Add 1 tablespoon of the grapeseed oil to the pan and reduce the heat to medium. Add 3 of the patties to the pan and cook until the first sides are seared, 3 to 5 minutes. Flip and cook until the burgers are cooked completely through, about 5 minutes. Repeat with the remaining tablespoon grapeseed oil and the other 3 burgers.
  • Butter each of the buns on both sides and toast them in the hot skillet until golden brown.
  • Dress each of the bottom halves of the buns with lettuce, tomato, red onion and avocado. Place a burger on top of each dressed bun and top with 2 tablespoons of the jalapeno jam. Finish with a bun top.

1 pound ground turkey, I prefer 85% lean, it has more fat which makes for a better burger! If your ground turkey has excess liquid, be sure to set on paper towels to remove the juices.
1/2-3/4 of one jalapeño pepper, minced (I like it hot so I use 3/4)
1 medium size shallot, peeled and minced
zest of one lime
2 Tablespoons chopped cilantro
1 teaspoon paprika
1 teaspoon cumin
1/2 a teaspoon sea salt
1/2 teaspoon black pepper
guacamole
pico de gallo
poached egg

Steps:

  • Note: The ground turkey I buy is the consistency of hamburger. If yours seems to have extra liquid, set on paper towels to drain juices.
  • Place turkey, herbs, spices and lime in bowl and use hands to mix well.
  • Form into four patties.
  • Place pan on medium heat.
  • Add olive oil to bottom of pan.
  • When pan is hot, place patties in pan and cook for about 5 minutes each side or until cooked through.
  • Top with guacamole, pico de gallo and poached egg if desired!
