1 onion, chopped
1 carrot, chopped
4 garlic cloves, chopped
2 teaspoons ground cumin
1 to 2 teaspoons chopped jalapeño chile with seeds, divided
2 15- to 16-ounce cans black beans, undrained
1 15-ounce can petite diced tomatoes in juice
1 1/2 cups low-salt chicken broth
Chopped fresh cilantro

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion, carrot, and garlic; sauté until vegetables begin to soften, about 6 minutes. Mix in cumin and 1 teaspoon jalapeño. Steps:

  • For the Jalapeño-Cheddar Cornbread Muffins: Preheat the oven to 425 degrees F and generously spray 9 cups of a 12-cup muffin tin with nonstick cooking spray.
  • Whisk together the cornmeal, flour, baking powder, baking soda and 1/2 teaspoon salt in a medium bowl. Whisk together the buttermilk, egg, melted butter and dark brown sugar in a large bowl. Fold the cornmeal mixture, jalapeños and Cheddar into the buttermilk mixture until just combined (it's OK if there are some small lumps).
  • Divide the batter evenly among the 9 greased muffin cups. Bake until golden brown and a toothpick inserted into the center comes out clean, 10 to 12 minutes. Let the muffins cool in the pan for 5 minutes. Then run an offset spatula around the edges of each muffin and invert onto a wire rack to cool completely, about 30 minutes.
  • For the taco soup: While the muffins bake, make the taco soup. Heat the oil in a large Dutch oven or large pot over medium-high heat. Add the ground beef and chorizo and cook, breaking up the meat with a wooden spoon, until browned and crumbly, about 6 minutes. Add the onion, bell pepper, a pinch of salt and several grinds of black pepper. Cook, stirring occasionally, until softened, about 6 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds. Add the chili powder, tomato paste, cumin, paprika, cayenne pepper and 1/2 teaspoon salt. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth, fire-roasted tomatoes, black beans and green chiles, and bring to a boil over high heat. Reduce the heat to medium-low, then simmer, partially covered, until the meat and beans are very tender and the sauce thickens slightly, 35 to 45 minutes. Taste and adjust the seasoning with salt and pepper.

3 slices bacon, finely chopped
1 medium onion, chopped
2 tablespoons butter
3 cloves garlic, sliced
4 lbs sweet potatoes, peeled and cubed
8 cups chicken broth
1/4 cup pickled jalapeno pepper, coarsely chopped
2 tablespoons jalapeno juice
1 teaspoon comino (cumin)
1/4 teaspoon baking soda
1/2 cup cilantro leaf
1 1/2 cups milk
1 teaspoon salt
1 teaspoon black pepper, freshly ground

Steps:

  • In a large stock pot, saute bacon and onion in butter until just tender.
  • Add garlic and cook about 2 more minutes.
  • Add sweet potatoes, chicken broth, pickled jalapeños, jalapeño juice and comino.
  • Cover and cook until potatoes are tender (approx. 20 to 30 minutes).
  • When done, add soda, cilantro and milk.
  • Coarsely mash potatoes with a potato masher.

This recipe comes from a wonderful little community called Homestead Heritage outside of Waco, TX. This spicy, creamy, smoky soup is a favorite of everyone who tries it and I'm pleased to say that they share their recipes! I entered this soup into our churches Souper Bowl contest and it won the Hot Stuff award! Notes to add: 1. I used about 5.5 lbs sweet potatoes and it was still very spicy. If you want to make it mild or kid friendly, cut way back on the jalapenos and just place them in a bowl as a side. 2. To sweeten it, I have found that 2 Tbsp brown sugar does the trick. 3. This soup freezes beautifully! You won't be disappointed in this soup!

5 lbs sweet potatoes
1 medium onion
4 slices turkey bacon (regular bacon is fine too)
3 garlic cloves
1/2 cup butter
6 cups chicken broth
1/4 cup jarred jalapeno

2 large sweet potatoes diced
6 medium shallots sliced
2 ribs celery diced
2 carrots diced
5 jalapeno peppers from jar
6 or more cups of chicken broth
1/4 cup peanut butter
1/2 teaspoon cumin
1/4 teaspoon nutmeg
1 tablespoon olive oil
1 tablespoon real butter
1/2 cup heavy cream
salt to taste
optional: hot sauce

Steps:

  • 1. Pour olive oil and melt butter in large dutch oven. Put on medium heat.
  • 2. Add the shallots, celery, carrots, jalapeno, stir and cook until soft, then add the sweet potatoes, cook and stir five minutes. Add the cumin and nutmeg.
  • 3. Add chicken broth, and make sure it just covers the potatoes. If it doesn't, add some more.
  • 4. Let the mixture come to a boil, then cover and turn down the heat to a simmer. Simmer until the potatoes are tender. (45 minutes to an hour)
  • 5. Puree the soup in batches in a blender until creamy. WARNING: Do small batches in the blender ON LOW to avoid burning yourself! The hot liquid jumps up and can overflow on high. Put the pureed soup in a pan as you finish each batch, then transfer the mixture back to the dutch oven. Heat, the soup, add the peanut butter to it and mix well. Then add the heavy cream and mix again. Heat the soup until it is hot, but don't boil it. Serve immediately with my hot French rolls (this site) and butter. Add hot sauce to the soup if desired. Steps:

  • In dutch oven, heat the oil over medium heat. Add the onions, garlic, and cubed chicken, cooking for 3-5 minutes.
  • Add cilantro and tortillas and cook for another 2-3 minutes, stirring occasionally. (the tortillas will break up and dissolve, this is normal).
  • Add the chicken stock, rotel tomatoes, chipolte peppers with sauce, chopped jalapenos, and bay leaf and bring to a boil.
  • Reduce heat, and add seasonings, beans and corn (and rice if using). Let simmer for 10 minutes. Remove bay leaf and serve with garnishes.

2 tablespoons unsalted butter
1 yellow onion, chopped
2 carrots, peeled and chopped (about a cup)
2 jalapenos, seeded and diced, plus additional jalapenos for serving
1 teaspoon minced garlic
1 teaspoon kosher salt
1/8 teaspoon cayenne pepper
1/4 cup flour
1 cup milk
4 cups low sodium chicken or 4 cups vegetable broth
3 small yukon gold potatoes, peeled and chopped
1 3/4 cups freshly grated sharp cheddar cheese, plus additional for serving, to taste
green onion, to taste, for serving

Steps:

  • Melt the butter in a large deep stockpot or Dutch oven over medium heat.
  • Add the carrots, onion, and jalapenos and saute until just beginning to soften, about 5 minutes.
  • Add the garlic, salt, and cayenne pepper and cook until the garlic is fragrant, about 30 seconds.
  • Sprinkle the flour over the top of the vegetables, then cook an additional minute until lightly golden.
  • Slowly stir in milk and cook until the mixture thickens, about 2 minutes, stirring constantly.
  • Transfer the mixture to a 4 quart or larger slow cooker. Stir in the chicken stock, then add the chopped potato. Cover and cook until the vegetables are tender, 5 to 6 hours on low.
  • Transfer the soup to a blender or food processor and puree in batches until smooth. You can also use an immersion blender directly in the slow cooker.
  • Stir the cheese in a half cup at a time, allowing it to melt completely before stirring in the next half cup.
  • Serve garnished with jalapeno slices, green onions, and additional cheddar cheese.

2 cups chicken broth
1/2 cup heavy cream
1 teaspoon Dijon mustard
1 tablespoon Worcestershire sauce

  • 1 Cook the bacon in a pan over medium heat and set aside on paper towels to drain, reserving 1-2 tablespoons of the grease in the pan. 2 Add the onion, celery and jalapeno and cook until tender, about 10 minutes. 3 Add the garlic and thyme and cook until fragrant, about a minute. 4 Add the butter and let it melt and get all bubbly then sprinkle on the flour and let it cook until it starts to turn golden brown, about 2-3 minutes. 5 Add the ale followed by the broth and bacon and let cook for 10 minutes. 6 Add the cream, mustard, Worcestershire sauce, and cheese and cook until the cheese has melted but do not bring it back to a boil. 7 Season with cayenne, salt and pepper to taste. and enjoy.

5 cups chicken broth (or stock)
2 tablespoons dried onion flakes
2 tablespoons parsley flakes
1 tablespoon dried celery flakes
1 tablespoon hot sauce (we use habanero sauce)

1 cup cooked chicken, chopped (optional)
2 cups Bisquick
2 -3 tablespoons chopped jalapenos
1/4 cup shredded monterey jack cheese (or cheddar) (optional)
1 teaspoon ground sage

1/2-2/3 cup 2% low-fat milk

Steps:

  • To a medium saucepan over med-high heat, add water, chicken bullion, seasonings, and chicken if using. Bring to a gentle boil.
  • Meanwhile, Mix all dumpling ingredients to form a thick dough.
  • When pot is ready, drop dumplings by heaping teaspoons into simmering liquid. Do in batches, about 6 at a time. Cook, turning occasionally, for 10-15 minutes, or until dough is cooked through. the soup will thicken up to a creamy sauce as the dumplings are simmering. Serve up in a bowl and enjoy immediately.

3 lbs sweet potatoes
4 cups chicken broth, or 4 cups water with 4 cubes chicken bouillon
1 medium onion, chopped
3 garlic cloves, minced
5 slices bacon
6 tablespoons butter
1/4 cup jalapeno
2 teaspoons cumin
1/2 cup chopped cilantro
1/2 cup half-and-half
salt and pepper to taste

Steps:

  • First, preheat your oven to 400 degrees, rinse off your jalapenos, wrap in foil, and throw them in for 20 minutes. Then take them out and give them a rough chop. Scrub your sweet potatoes and cut them in half. Bring a large pot of water to boil and add in sweet potatoes. Boil until you can stick them and they are soft. Drain and let them cool until you can handle them. Peel off the skin, set aside. While potatoes are cooling, add butter to the soup pot over medium-high heat. Add onion, saute until onions are translucent, add garlic and saute about one more minute. Cook your bacon separately in the microwave, oven, or in a skillet. When cooked, break 3 of the slices into pieces and add to the onions and garlic. Add chicken broth to the pot, cover and bring to a boil. Slice the peeled sweet potatoes into bite sized pieces and add to the soup pot. Add jalapenos, cumin, cilantro, and half-and-half. Stir into soup. Sprinkle with a little salt and pepper. Use your immersion blender or regular blender, to blend all the ingredients until they are smooth with no lumps. Add salt and pepper to taste. Sprinkle remaining bacon and some cilantro on top.
