1 teaspoon vegetable oil
1/2 cup finely chopped onion
1/2 cup chopped seeded plum tomato
1 teaspoon minced jalapeño chili
1 garlic clove, minced
1 teaspoon chili powder
1 15- to 16-ounce can kidney beans, rinsed, well drained
1/4 cup dry breadcrumbs
6 tablespoons barbecue sauce
1 large egg white, beaten to blend
4 whole grain buns, toasted
4 tablespoons grated reduced-fat cheddar cheese
4 lettuce leaves
4 tomato slices

Steps:

  • Heat oil in medium nonstick skillet over medium heat. Add next 5 ingredients; sauté 5 minutes. Cool slightly.
  • Using fork, coarsely mash beans in medium bowl. Mix in onion mixture, breadcrumbs, 2 tablespoons barbecue sauce and egg white. Shape mixture into four 1/2-inch-thick patties. (Can be prepared 4 hours ahead. Cover and chill.)
  • If grilling, spray grill rack with nonstick spray, then prepare barbecue (medium heat). If sautéing, spray large nonstick skillet with nonstick spray and heat over medium heat. Lightly spray patties on both sides with nonstick spray. Place patties on grill or in skillet and cook until golden brown and heated through, about three minutes per side.
  • Place burgers on bun bottoms. Spread 1 tablespoon barbecue sauce over each. Sprinkle with cheese. Top with lettuce, tomatoes and bun tops.

1 tablespoon canola oil
1 teaspoon butter
1 medium onion, halved and thinly sliced
Dash salt
Dash sugar
BURGERS:
1/3 cup jalapeno pepper jelly
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound ground beef
4 hamburger buns, split and toasted
2 tablespoons crumbled Gorgonzola cheese
Thinly sliced jalapeno pepper, optional

Steps:

  • In a small skillet, heat oil and butter over medium heat. Add onion, salt and sugar; cook and stir until onion is softened, 3-4 minutes. Reduce heat to medium-low; cook until deep golden brown, stirring occasionally, 4-6 minutes., In a large bowl, mix jelly, salt and pepper. Add beef; mix lightly but thoroughly. Shape into four 1/2-in. thick patties., Grill burgers, covered, over medium heat or broil 4 in. from heat until a thermometer reads 160°, 4-5 minutes on each side. Serve on buns with caramelized onion, cheese and, if desired, sliced jalapeno.
