Tips:

  • Choose Plump, Firm Chicken Breasts: Ensure the chicken breasts are free from blemishes and have a uniform thickness for even cooking.
  • Make a Flavorful Marinade: Combine olive oil, fresh lime juice, minced garlic, dried oregano, cumin, chili powder, salt, and pepper in a large bowl. Whisk until well blended.
  • Marinate the Chicken: Place the chicken breasts in the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, but ideally overnight.
  • Preheat the Grill: Prepare your grill for medium-high heat. If using a charcoal grill, allow the coals to burn until they are white-hot and ash-covered.
  • Grill the Chicken: Remove the chicken from the marinade and discard the marinade. Grill the chicken breasts over medium-high heat for 8-10 minutes per side, or until cooked through and the internal temperature reaches 165°F (74°C).
  • Let the Chicken Rest: Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing and serving.
