No chocolate here. It's just called that way because they are shaped like fudge...cut up in small squares with pretty much the same consistency...only spicier and yummier. Got this from my mom (she got it from a Shriner's cookbook) From www.chiggerridge.com recipe collection

Time 45m

Number Of Ingredients 6

1 lb sharp cheddar cheese
1 lb monteray jack cheese
2 eggs
1/2 c flour
1 can(s) evaporated milk
1 c pickled jalapeno whole or chopped

Steps:

  • 1. Preheat oven to 350 Degrees F
  • 2. Grate cheese and mix together or grate in pan. Spread evenly on a square 8x8 or 9x9 cake pan or cookie sheet. (not greased).
  • 3. Chop or keep jalapenos whole, then scatter jalapenos over cheeses.
  • 4. Mix eggs, flour and evaporated milk with a fork.
  • 5. Pour over cheese and jalapeno Mixture.
  • 6. Bake 40 minutes at 350 degrees.
  • 7. Cut in squares when cool. Serve with club crackers or any crackers of your choice or vegetables.

Tips:

  • Use fresh jalapeños: Fresh jalapeños have the best flavor and heat. If you can't find fresh jalapeños, you can use dried or canned jalapeños, but they won't have as much flavor.
  • Remove the seeds and ribs from the jalapeños: This will help to reduce the heat of the fudge. If you want your fudge to be spicier, you can leave some of the seeds and ribs in.
  • Use a candy thermometer to reach the correct temperature: This is important to ensure that the fudge sets properly. If you don't have a candy thermometer, you can use the cold water test. To do this, drop a small amount of fudge into a bowl of cold water. If the fudge forms a soft ball, it is ready. If it forms a hard ball, it is overcooked.
  • Let the fudge cool completely before cutting it: This will help to prevent the fudge from crumbling.
  • Store the fudge in an airtight container in the refrigerator: Fudge will keep for up to 2 weeks in the refrigerator.

Conclusion:

Jalapeño fudge is a delicious and unique treat that is perfect for any occasion. It's easy to make and can be customized to your desired level of spiciness. So next time you're looking for a sweet and spicy treat, give jalapeño fudge a try!
