1 (8 ounce) package cream cheese, softened
⅓ cup evaporated milk
1 pickled jalapeno pepper, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x9 inch casserole dish with cooking spray.

2 eggs, beaten
1/2 cup sugar
3/4 cup flour
1/2 cup yellow cornmeal
1/2 tablespoon baking powder
1 teaspoon salt
1 teaspoon garlic powder

15 ounces frozen corn
14 3/4 ounces creamed corn
1/2 jalapeno pepper, finely chopped
2 cups cheddar cheese, shredded
1 cup milk
2 tablespoons butter, melted

1 can(s) whole kernel corn or mexicorn, drained
1 can(s) creamed corn
2 Tbsp jalapeno peppers, finely chopped with seeds, more or less to your taste
1 1/2 - 2 c velveeta cheese, regular or mexican, cubed
2 1/2 - 3 c white rice, cooked

Steps:

  • 1. Option 1: Preheat oven to 350* F. In a large baking dish combine all ingredients and mix well.
  • 2. Bake for 35 minutes or until heated through. Stir well and serve.
  • 3. Option 2: In large microwave safe baking dish with lid, combine all ingredients together. Cover and cook on HI for 5 minutes. Stir, cover and cook on HI for another 5 minutes. Stir again, cover and cook on HI for 5 minutes more. If you want it creamier you can add a little milk before cooking the last 5 minutes.
  • 4. Remove from microwave, keep covered and let sit for 5 minutes. Enjoy! *TIPS: You can also add crushed red pepper flakes instead of jalapeno peppers if desired.

2 cans creamed corn
1/4 red bell pepper chopped fine
3 thin green onions chopped fine
1/2 cup corn meal
1/4 level teaspoon garlic powder
2 eggs beaten
1/2 cup sugar
1 stick of real butter melted
3 chopped jalapeno slices from jar
1/8 teaspoon red pepper flakes
1 teaspoon cornstarch

Steps:

  • 1. Pre-heat oven to 350 degrees. Grease a 2.5 quart pyrex dish.
  • 2. Melt a stick of butter over low heat in a small pan.
  • 3. Fine chop the red bell pepper, green onions and the jalapeno slices, set aside.
  • 4. In a medium mixing bowl add creamed corn, corn meal, cornstarch, sugar, garlic powder and stir to combine.
  • 5. Beat the two eggs and add to the mixture.
  • 6. Add fine chopped red bell pepper, green onions and jalapeno slices, add the melted butter, sprinkle with the red pepper flakes and stir.
  • 7. Pour into greased dish. Bake at 350 degrees, depending on your oven, 1 hour 15 minutes to 1 hour 30 minutes or until mixture is set and a lovely golden brown. When it is done, it pulls slightly away from the dish and a toothpick inserted in center comes out clean. Enjoy!

I've made a few changes to it due to personal preferences. This recipe is easily halved. Great use for leftover rice....just eliminate step 1 in the directions.

1 cup long-grain rice, uncooked
1 medium onion, chopped
2 garlic cloves, minced
1 medium green bell pepper, chopped (may substitute red bell pepper)
1 cup celery, chopped
1/2 cup butter, melted
1 -3 jalapeno pepper, seeded and chopped (based on your heat tolerance)
2 (16 1/2 ounce) cans cream-style corn
1 cup mild cheddar cheese, shredded
1/2 cup monterey jack cheese, shredded
1 tablespoon sugar

  • Cook the rice according to the package directions; set the rice aside.
