Time 55m

Yield 24 servings (2 franks per serving)

Number Of Ingredients 10

2 quarts neutral frying oil
One 12-ounce can smoked cocktail franks, such as Hillshire Farms
One 8.5-ounce box corn muffin mix, such as Jiffy
1/2 cup reduced-fat buttermilk
1 large egg
1/4 cup hot pepper jelly, melted
1/4 cup yellow mustard
1/4 cup ketchup
1/4 cup mayonnaise
2 dashes Worcestershire sauce

Steps:

  • For the corndogs: Pour the oil into a Dutch oven fitted with a deep-fry thermometer. Place over medium-high heat and preheat to 375 degrees F.
  • Insert a toothpick lengthwise into the center of each cocktail frank, leaving about 1/2 inch of toothpick exposed.
  • Mix together the corn muffin mix, buttermilk and egg in a medium bowl to make a batter. Pour the batter into a small cup to make it easier to dip the franks.
  • In batches, hold onto the toothpick and dip a frank into the batter. Slowly turn until the frank is evenly coated. Drop into the hot oil and fry until golden brown, 1 to 2 minutes per side. Drain and place onto a cooling rack over a baking sheet. Repeat with the remaining franks and batter. Let cool slightly.
  • For the sweet and spicy mustard: Whisk together the hot pepper jelly and mustard in a small bowl.
  • For the fry sauce: Whisk together the ketchup, mustard and Worcestershire sauce in a small bowl.
  • Serve the corndogs with the sauces.

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 13

1 tablespoon unsalted butter, plus additional for topping
1 cup gluten-free all-purpose flour blend
1 cup finely ground cornmeal
1 tablespoon superfine sugar
2 teaspoons gluten-free baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda
2/3 cup buttermilk
2 large eggs plus 1 large egg white, lightly beaten
1 cup grated cheddar cheese
1/2 cup canned creamed corn
3 small green onions, thinly sliced
2 to 3 jalapeno chiles, seeded, deveined and finely chopped

  • In a small bowl, mix the buttermilk and eggs together well. Fold the wet ingredients into the dry ingredients to thoroughly mix.
  • Fold in the cheese, creamed corn, green onions and chiles and stir until well combined.
  • Pour the mixture into the prepared skillet or baking dish and dab a bit more butter on top. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown. Leave to cool in the pan or dish a few minutes before slicing and serving while warm.

CHEESY JALAPEñO CORN DOGS RECIPE BY TASTY

Cheesy Jalapeño Corn Dogs Recipe by Tasty image

Here's what you need: hot dogs, thin slices of cheddar cheese, all-purpose flour, yellow cornmeal, sugar, baking powder, salt, black pepper, milk, egg, jalapeño, peanut or vegetable oil, mustard, wooden skewer

Provided by Hector Gomez

Categories     Dinner

Yield 4 serving

Number Of Ingredients 14

4 hot dogs
4 thin slices of cheddar cheese, room temperature
1 cup all-purpose flour
1 cup yellow cornmeal
¼ cup sugar
4 teaspoons baking powder
¼ teaspoon salt
⅛ teaspoon black pepper
1 cup milk
1 egg
1 jalapeño, minced
1 qt peanut or vegetable oil, for frying
mustard, for serving
wooden skewer

Steps:

  • Place a hot dog on a slice of cheese, then roll the cheese slice around it. Push a wooden skewer through the cheese-wrapped hot dog, then place seam side down on a baking sheet. Repeat with the remaining hot dogs. Freeze for 20 minutes.
  • In a large bowl, add the dry ingredients and stir to combine. Once fully combined, mix in the milk, egg, and jalapeño. Stir until the batter is smooth and without lumps. You may need to add 1 or 2 tablespoon of flour; the batter should be thick enough to cling to the hot dog. Pour it into a tall glass for easier dipping.
  • Heat the oil in a large pot until it reaches 350°F (180°C).
  • Holding the tip of the skewer, take a frozen hot dog and dip it fully into the batter, lifting it out, then rotating it to let excess batter drip off. Using tongs, carefully place the battered dog into the hot oil. Hold it fully submerged for 30-60 seconds until a crust forms, then rotate it so that it fries evenly. Cook for 3-5 minutes, or until golden brown. Repeat with the remaining hot dogs. Serve with mustard for dipping.
  • Enjoy!

Tips:

- To make sure the corndogs are cooked evenly, use a deep fryer or a large pot with at least 3 inches of oil. - If you don't have a deep fryer or a large pot, you can also shallow fry the corndogs in a skillet with about 1 inch of oil. - To prevent the corndogs from sticking to the pan, make sure the oil is hot enough before adding them. - To test the oil temperature, drop a small piece of bread into the oil. If it sizzles and browns quickly, the oil is hot enough. - Cook the corndogs for 3-4 minutes, or until they are golden brown and crispy. - Serve the corndogs immediately with your favorite dipping sauce.

Conclusion:

Jalapeno cheddar mini corndogs are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks. With a crispy cornbread coating, juicy hot dog, and a spicy jalapeno cheddar filling, these corndogs are sure to be a hit.
