6 large jalapeños, sliced crosswise, about 3/8-inch thick (about 3 cups)
1 small head garlic, broken into unpeeled pieces
1 large onion, cut in wedges or rings
1/2 medium cauliflower, cut into small florets (about 3 cups)

2 green bell peppers, diced
3 cloves garlic, chopped
½ cup salt
3 cups cider vinegar
