1 1/2 cups all-purpose flour (see Cook's Note)
2 1/4 teaspoons kosher salt
1 teaspoon baking soda
1 stick (8 tablespoons) unsalted butter, softened
1/4 cup vegetable oil
3/4 cup granulated sugar
1/2 cup packed dark brown sugar
1 tablespoon pure vanilla extract
2 large eggs, at room temperature
One 12-ounce bag semisweet chocolate chips

Steps:

  • Arrange racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk the flour, salt and baking soda in a medium bowl until completely combined. Beat the butter, oil, granulated sugar and brown sugar in the bowl of a stand mixer with the paddle attachment (or a large bowl if using a hand mixer) on medium-high speed until creamy, about 5 minutes. The mixture will look broken but that's ok. Beat in 1 teaspoon water and the vanilla until smooth. Reduce the speed to low and beat in the eggs one at a time until incorporated. Beat in the dry ingredients until just combined. Fold in 1 1/2 cups chocolate chips. Reserve the rest.
  • Drop heaping tablespoons of the dough onto the prepared baking sheets about 2 inches apart. Lightly press about 3 of the remaining chocolate chips into each cookie.
  • Bake the cookies until they are a deep golden brown, rotating the pans halfway through, 12 to 15 minutes. Let the cookies cool on the baking sheets for 10 minutes. Then transfer them to a wire rack to cool completely. Repeat with any remaining dough.

1/2 cup white sugar
1/2 cup brown sugar (packed)
1/2 cup applesauce
1/4 cup unsalted butter
1/2 egg substitute
2 tablespoons milk
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
3 1/2 cups rolled oats
2 cups semi-sweet chocolate chips
1 cup walnuts (chopped) or 1 cup pecans (chopped)

Steps:

  • Preheat oven to 350°F (175°C).
  • In a large bowl, cream the butter, applesauce, brown sugar and white sugar until smooth. Add the egg sub. and mix. Stir in the milk and vanilla. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. Using a wooden spoon, stir in the rolled oats, chocolate chips and walnuts.
  • Roll the dough into walnut sized balls, and place 2 inches apart on an unprepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Cool cookies on wire racks.

For Cookies:
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks salted butter, melted and cooled to room temp
1 cup dark brown sugar
1/2 cup granulated sugar
1 large egg + 1 egg yolk
2 teaspoons vanilla extract
1 12-ounce bag Ghirardelli Semi-Sweet Chocolate Chips
For Whiskey Frosting:
2/3 cups Ghirardelli Semi-Sweet Chocolate Chips
3 Tablespoons salted butter, softened
1/4 cup heavy cream
2 Tablespoons Jack Daniel's Whiskey
Crushed pretzels for topping

Steps:

  • For Cookies: Heat oven to 375 degrees and line baking sheets with parchment paper. In a mixing bowl, stir together flour, salt, and baking soda. Set aside. In the bowl of a stand mixer, cream together butter, brown sugar and granulated sugar. Beat on medium speed for two minutes. Add egg, egg yolk and vanilla extract. Remove bowl from mixer and stir in chocolate chips by hand. Using a 1/4 cup ice cream scoop, measure out cookies and place on prepared baking sheets. Use your fingers to flatten the dough slightly. Bake for 12 to 15 minutes, or just until edges are set and are lightly brown. Remove from oven and cool on baking racks while you prepare the frosting. NOTE: Don't place cookies too close together on the baking sheet or they will run together! The key to chewy cookies is to avoid over-baking them! They will continue to set up after they are removed from the oven. For Frosting: Place chocolate in a microwave-safe bowl and heat until melted, stirring every 30 seconds. Whisk in the butter until melted. Add the cream and Jack Daniel's Whiskey, stirring until smooth. Immediately spoon frosting over cooled cookies. Top with crushed pretzels and allow to set. Enjoy
