Tips:
- Choose the right pumpkin: Use a sugar pumpkin or pie pumpkin, which are smaller and have a sweeter, less stringy flesh than carving pumpkins.
- Clean and prepare the pumpkin: Cut the pumpkin in half, scoop out the seeds and pulp, and brush the inside with melted butter.
- Roast the pumpkin: Place the pumpkin halves cut-side up on a baking sheet and roast in a preheated oven until tender.
- Make the filling: While the pumpkin is roasting, make the filling by combining evaporated milk, sweetened condensed milk, eggs, pumpkin pie spice, and vanilla extract in a large bowl.
- Assemble the pie: Once the pumpkin is roasted and the filling is made, place the pumpkin halves in a pie crust and pour the filling over top.
- Bake the pie: Bake the pie in a preheated oven until the crust is golden brown and the filling is set.
