COPYCAT WHISKEY GLAZE RECIPE

Copycat Whiskey Glaze Recipe image

This Copycat TGI Fridays Whiskey Glaze (also previously called Jack Daniels Sauce), is the perfect blend of sweet and savory. It's amazing on chicken, beef, pork, seafood, veggies and more!

Provided by The Chunky Chef

Categories     Condiment     Sauce

Time 1h40m

Number Of Ingredients 13

1 head garlic
drizzle of olive oil
pinch of salt and pepper
1 cup pineapple juice
2/3 cup water
1/4 cup teriyaki sauce
1 Tbsp soy sauce (reduced sodium is preferred)
1 1/3 cup packed dark brown sugar
3 Tbsp lemon juice
3 Tbsp finely minced white onion
1 Tbsp whiskey (Jack Daniels is the original whiskey used)
1 Tbsp canned crushed pineapple
1/4 tsp cayenne pepper (amount can be adjusted based on your tolerance for heat)

Steps:

  • Heat oven to 400°F. Peel loose paper off the garlic, keeping the whole head together.
  • Slice off the top 1/2" of the whole head, exposing the tops of the cloves. Place garlic on a sheet of foil and drizzle the exposed cloves liberally with olive oil and sprinkle with salt and pepper.
  • Wrap the foil up around the garlic, then place in baking dish and roast for 40-50 minutes. Set aside until cool enough to handle.
  • Add pineapple juice, water, teriyaki sauce, soy sauce and brown sugar to a medium saucepan and heat over MED HIGH heat. Bring the mixture to a boil, whisking occasionally, then once lightly boiling, reduce heat to LOW so the mixture is simmering.
  • Squeeze roasted garlic cloves out into a small bowl and mash the cloves until smooth. Alternately, you can add the cloves to the saucepan and use a whisk to mash them, but I've found it's difficult to get the garlic as smooth this way.
  • Add lemon juice, white onion, whiskey, crushed pineapple and cayenne pepper. Whisk to combine, then adjust heat if needed to keep the sauce simmering steadily.
  • Let sauce simmer for 45-50 minutes, until sauce has reduced by about half and is syrupy in texture. Keep an eye on it so that it doesn't boil over. Keep in mind the sauce will thicken a bit more as it cools.
  • Set aside to cool a bit, then use immediately, or cool completely and store.

JACK DANIELS DIPPING SAUCE

Jack Daniels Dipping Sauce image

This is a very close reproduction of TGI Friday's Jack Daniels Sauce. When I find a restaurant food item that I particularly like, I try to reproduce it the best that I can, so I can enjoy it at home. A lot of my recipes that I post are of those items. When I make this sauce I make several jars and hot water can them so I can have some at hand. My grand kids love this sauce on hot wings ( I bake the wings and have several types of sauces for them to choose from). This sauce takes some preparation but is well worth it.

Time 1h25m

Yield 1 1/2 cups of sauce, 4-6 serving(s)

Number Of Ingredients 11

3 heads garlic
1 tablespoon olive oil
1 cup pineapple juice
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1 1/3 cups dark brown sugar
3 tablespoons lemon juice
3 tablespoons onions (finely chopped)
1 tablespoon Jack Daniels Whiskey (or suit to taste)
3 tablespoons crushed pineapple
1/4 teaspoon cayenne pepper

Steps:

  • Cut about 1/2 inch off tops of garlic. Cut the roots so that the garlic will sit flat. Remove the papery skin from the garlic, but leave enough so that the cloves stay together. Put garlic into a small casserole dish, drizzle olive oil over it and cover with lid or foil. Bake in preheated 325 degree oven for 1 hour. Remove garlic and let cool until you can handle it.
  • Combine pineapple juice, teriyaki sauce, soy sauce and brown sugar in a medium saucepan overr medium-high heat. Stir occasionally until mixtures boils, then reduce heat until mixture is just simmering.
  • Squeeze the sides of the garlic until the pasty roasted garlic is squeezed out. Discard remaining skin. Add this to the simmering mixture and whisk to combine.
  • Add remaining ingredients to saucepan and stir. ( I like to add just a touch more J Daniels for my taste).
  • Let mixture simmer for 25-30 minutes or until sauce has been reduced by about 1/3 and is thick and syrupy. Make sure it doesn't boil over.
  • Serve warm with ribs, chicken or shrimp.

Tips:

  • Choosing the right Jack Daniel's whiskey: for a bolder flavor, opt for a higher-proof whiskey like Jack Daniel's Single Barrel Select or Gentleman Jack.
  • Balancing the flavors: use a combination of sweet and savory ingredients to create a well-rounded sauce. For example, brown sugar or honey can add sweetness, while soy sauce or Worcestershire sauce can add savory notes.
  • Simmering the sauce: allow the sauce to simmer gently over low heat for at least 15 minutes to allow the flavors to meld together and deepen.
  • Adjusting the consistency: if the sauce is too thick, add a little water or broth to thin it out. If it is too thin, simmer it for a few minutes longer to reduce it.
  • Adding a finishing touch: for an extra layer of flavor, add a pat of butter or a splash of cream to the sauce just before serving.

Conclusion:

With its smoky, sweet, and slightly boozy flavor, Jack Daniel's cooking sauce can add a unique and delicious touch to a wide variety of dishes. Whether you are using it to glaze chicken or pork, add flavor to vegetables, or create a tasty marinade, Jack Daniel's cooking sauce is sure to please. So next time you are looking for a way to add a little something extra to your meal, reach for a bottle of Jack Daniel's and get cooking!
