Number Of Ingredients 17

1 3-4 lb. whole chicken (cut into 8 pieces (skin left on))
1/2 c. canola oil
2 TBS grill seasoning
Salt and Pepper to taste
1/2-3/4 c. Jack Daniels (or to taste)
1/2 c. onion (chopped)
4 cloves garlic (minced)
2 c. ketchup
1/3 c. vinegar
3 TBS Worcestershire sauce
1/2 c. brown sugar (firmly packed)
3/4 c. molasses
1/2 tsp. pepper
1/2 TBS salt
1/4 c. tomato paste
1 tsp. Liquid Smoke
1/2 tsp. Tabasco sauce (or to taste)

Steps:

  • Combine onion, garlic and Jack Daniels in a 3 quart saucepan.
  • Sauté until translucent, about 10 minutes.
  • Add all remaining ingredients and bring to a boil.
  • Simmer uncovered until reduced and thickened (about 15 to 25 minutes).
  • Add more Jack Daniels if a stronger flavor is desired.
  • In a large bowl combine chicken, oil, grill seasoning, salt, and pepper. Allow to sit at room temperature about 20 minutes.
  • Heat grill to high. Spray well with cooking spray.
  • Sear chicken on each side for 2 minutes.
  • Reduce heat to medium and continue cooking for about 25 minutes, turning every 3-4 minutes to crisp both sides.
  • Baste with barbecue sauce and continue cooking for 6-7 minutes, turning often and re-basting.

4 boneless skinless chicken breasts
4 tablespoons chopped shallots or 4 tablespoons scallions
1/2 cup Jack Daniels Whiskey
2 cups chicken broth
2 cups heavy cream
4 teaspoons tarragon
1/2 lemon, juice of

Steps:

  • Saute chicken breasts in butter (approx 7 minutes per side); wrap in foil and keep warm in 350* oven.
  • Saute shallots.
  • Add Jack Daniels and light with a match, flame will be high, let flame die down.
  • Add broth and tarragon.
  • Fast boil, uncovered, until sauce reduces to thick syrupy glaze (this takes longer than you think, approx 25 mins).
  • Add lemon juice and cream; simmer until thickened (approx 15 mins).
  • Put chicken breasts into sauce to coat.
  • Serve with pasta or rice to utilize the yummy sauce.
  • (I serve it with Penne Pasta and just toss the pasta in with the chicken and the sauce).

1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
