1 lb ground beef
2 eggs
1/4 cup gluten free breadcrumbs
1/2 teaspoon dried basil
1/2 teaspoon dried thyme

1 small onion, grated
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup grated Parmesan cheese
1/2 cup marinara pasta sauce (homemade here, minus the meat)
1/2 cup shredded Italian cheese blend
minced parsley for garnish

Steps:

  • Preheat the oven to 350 degrees. Lightly grease a loaf pan with cooking spray, set aside. In a large bowl, combine the ground turkey and beef, eggs, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. To not over handle the mixture otherwise it will get tough. Place the mixture in the greased loaf pan and form into a loaf. Top the meatloaf with pasta sauce. Place filled loaf pan on a baking sheet and bake in the preheated oven for 40-45 minutes. Remove the meatloaf from the oven and sprinkle the top with the remaining shredded cheese. Place the meatloaf back in the oven and bake until the cheese is melted. Remove the meatloaf from the oven and allow to rest for 5-10 minutes before serving/slicing. Garnish with parsley if desired.

1 pound ground veal, or substitute ground beef or turkey
1 pound ground pork
2 teaspoons kosher salt
1/2 teaspoon black pepper
Healthy pinch of red-pepper flakes
1 teaspoon crushed fennel seed
1/8 teaspoon nutmeg
1 cup dry bread, cut in 1/2-inch cubes, soaked in 1 cup milk until softened
2 eggs, beaten
3 tablespoons chopped parsley
1/2 teaspoon dried oregano
5 ounces cooked broccoli rabe or spinach, blanched, squeezed dry and chopped (about 3/4 cup)
1 cup pitted green olives, roughly chopped
1 ounce grated Parmesan (about 1 cup)
5 ounces provolone, cut in 1/4-inch dice (about 1 cup)
5 bay leaves
4 tablespoons olive oil
1 cup diced onion
1 whole garlic clove

Steps:

  • Put veal and pork in a large mixing bowl. Add salt, black pepper, red pepper, fennel seed and nutmeg. Knead mixture with hands to incorporate.
  • Add soaked bread with milk, eggs, parsley, oregano, broccoli rabe, olives, Parmesan and provolone. Mix again with hands and knead to make sure all ingredients are distributed evenly. Pat mixture into a free-form loaf and place in a 9-by-13-inch baking dish. Press bay leaves on top. You may complete this step several hours, or a day in advance, of baking.
  • Make tomato sauce: Put olive oil in a nonreactive pan over medium heat. Add onions, garlic clove and a little salt, then cook, stirring, until translucent, about 8 to 10 minutes. Add tomato purée, crushed tomatoes, red-pepper flakes and basil sprig. Simmer for 10 minutes. Taste and adjust seasoning. Sauce may be made in advance, if desired.
  • Heat oven to 400 degrees. Spoon sauce over meatloaf, letting it spill over into the baking dish to surround loaf. Sprinkle top of loaf with grated pecorino and provolone, then sprinkle with bread crumbs.
  • Bake at 400 degrees for 30 minutes, then cover, reduce heat to 350 and cook for 30 to 45 minutes more, until internal temperature is 150 degrees. Let rest at least 10 minutes before slicing. Top each serving with a good spoonful of sauce and garnish with basil leaves, if using.

2 1/2 lbs italian seasoned ground turkey (Jennie O)
1 yellow onion
10 white mushrooms
6 garlic cloves
1 carrot
1 cup Italian seasoned breadcrumbs
2 eggs
3/4 cup barbecue sauce
6 ounces shaved parmesan cheese
seasoned pepper
4 tablespoons extra virgin olive oil

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Dice onion and mushrooms. Mince garlic. Sautée in a skillet with EVOO until onions are golden and translucent. Season with seasoned pepper. Remove from heat.
  • 3. Grate carrot into a large mixing bowl then add 1/2 cup BBQ sauce, 4 oz shaved Parmesan cheese and remaining ingredients and blend thoroughly. When finished, mixture should be firm enough to maintain a loafed shape. If needed, add more bread crumbs to stiffen mixture.
  • 4. Place ground turkey mixture into 5 small loaf pans approx 5x3 inches (I purchased mine from grocery store in a set of 5 disposable pans with lids).
  • 5. Bake at 350 degrees for approximately 40-45 minutes. With approximately 15 min remaining, spread remaining BBQ sauce over loafs then sprinkle with remaining Parmesan cheese. When done internal temp should be 165 degrees F and cheese on top melted and golden.

8 pounds boneless, skinless turkey breast, cut into large scaloppini (12 to 15 cutlets)
2 tablespoons kosher salt
1 cup all-purpose flour
5 large eggs, beaten
3 1/2 cups breadcrumbs
2 teaspoons dried oregano
1 teaspoon red pepper flakes
Grapeseed or canola oil, for frying
1 tablespoon unsalted butter, at room temperature
Two 25-ounce jars store-bought marinara sauce
3 1/2 cups shredded mozzarella
1 1/2 cups freshly grated Parmesan
1/2 cup roughly torn fresh basil leaves

Steps:

  • Season the scaloppini evenly with 4 1/2 teaspoons salt.
  • Place the flour in a shallow bowl, the eggs in a separate shallow bowl and the breadcrumbs in a third shallow bowl. Season the breadcrumbs with the oregano, pepper flakes and remaining 1 1/2 teaspoons salt. Working with one piece of turkey at a time, dredge each piece in the flour, followed by the egg and finished with the breadcrumbs. Place on a baking sheet.
  • Heat a large skillet over medium-high heat. Place a wire rack on a baking sheet. Add 1/4 cup of grapeseed oil to the hot skillet. Fry the turkey pieces, 2 at a time or as many as will fit in your skillet, until golden brown and crispy, about 3 minutes per side. Add more oil to the skillet as needed. Remove to the rack and continue with the remaining turkey pieces.
  • Preheat the oven to 400 degrees F. Butter an 11-by-13-inch roasting pan.
  • Spoon 1 cup of marinara on the bottom of the prepared pan. Nestle the turkey pieces in the sauce to make one layer covering the bottom of the pan, about 4 pieces. Spoon another cup of sauce on top and sprinkle with 1 cup mozzarella and 1/2 cup Parmesan. Sprinkle half of the basil over the top. Shingle another layer of turkey, sauce, cheese and basil. On the final layer, cover the top with the remaining turkey and spoon over the remaining sauce. Sprinkle with the remaining 1 1/2 cups mozzarella and 1/2 cup Parmesan. Bake until golden brown and bubbly, about 45 minutes. Allow to rest for 10 minutes before slicing and serving.
